Tater Tot Bake (I ALSO ADD GREEN BEANS)

Yields: 6 servings
"A lickety-split version of that ever-popular standby, shepherd's pie. Seasoned ground beef and onions are sauteed, layered in a casserole with potatoes, topped with condensed cream of mushroom soup, sprinkled with cheese and baked."
INGREDIENTS:
1 pound ground beef
1 onion, chopped
salt and pepper to taste
1/2 (32 ounce) package tater tots 1 (10.75 ounce) can condensed cream of
mushroom soup
1/2 cup milk
1 1/2 cups shredded Cheddar cheese
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large skillet over medium-high heat, brown the ground beef with the onions. Drain excess fat, and season with salt and pepper to taste.
3. Spread the beef mixture evenly over the bottom of a 2 quart casserole dish. Arrange tater tots evenly over beef layer. In a small bowl, stir the soup into the milk until smooth; pour over tater tot and beef layers. Sprinkle Cheddar cheese evenly over the top.
4. Bake in preheated oven for 30 to 40 minutes, until cheese is bubbly and slightly brown

Chicken n' dumplings
Boil chicken breasts with salt, onions and celery. Remove chicken from pot, retaining broth. mix flour with some salt and a little bit of shortening til it resembles coarse meal - add water to make a stiff dough (this is kinda like pie crust). Roll out dough and cut into strips - drop in remaining broth. Add chicken and allow to warm through.

Mac and cheese:
Cook 1 # elbow pasta as per pkg. directions
Melt 2 T butter in sauce pot. Remove from heat and add 2 T flour, stir to blend. Add 1 c milk. Using whisk, stir, return to heat. Cook, stirring as it thickens. When thick, add 6-8
1" cubes of velveeta. Stir with spoon on low heat until it melts. Add 1/2 t salt, 2-3 shakes black pepper, and 1 shake of cayenne pepper, add cooked drained pasta. Stir until incorporated. I do not usually bake it. Great the way it is, however sometimes I pour into greased casserole and for a one dish dinner, adding just a little more milk to keep from being too thick when baked. Add chunks of hotdogs, and put a layer of bisquits over top. Bake until bisquits are golden in 400 oven about 12-15 minutes.
chicken spaghetti, fried fish and shrimps........and of course don't foget the garlic bread for the ghetti's.
Mac and Cheese! I buy Kraft 3 cheese Mac and cheese, prepare as directed, then add 1/2 cup milk, 1 handful Asiago, and dot with butter. on top I put crushed Ritz crackers that have been browned in butter. Cover all this with foil, and bake on 350 degrees for about 45 min. HMMM-comfort food heaven! For more servings, use 2 boxes, and double the other goodies you put in it!

My mom made this one, soooo good:
Creamy Tex-Mex Chicken Spaghetti
Ingredients:
1 (16 ounce) package spaghetti pasta
2 tablespoons olive oil
1 onion, chopped
2 (9 ounce) packages precooked chicken slices or 2 cups chopped cooked turkey
1 (16 ounce) jar chunky salsa
1 (15 ounce) jar four cheese Alfredo sauce
1/2 cup grated Parmesan cheese
2 avocados, peeled and chopped
Preparation:
Bring a large pot of salted water to a boil. Meanwhile, in large skillet cook onion in olive oil over medium heat until onion is tender, about 5 minutes.
Cook pasta according to package directions. While pasta is cooking, add chicken or turkey and salsa to onions and bring to a simmer. Then stir in Alfredo sauce.
Drain pasta and add to mixture in skillet. Toss over medium heat for a few minutes. Then serve, sprinkling with Parmesan cheese and topping with avocado. Serves 6

SNICKERDOODLE COOKIES
Ingredients:
? cup each butter and shortening (or marg), at room temperature
1 ? cups sugar
2 eggs
1 ? teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
2 ? cups all-purpose flour
Beat butter, shortening, sugar and eggs together until creamy. Add cream of tartar, baking soda and salt, then blend. Add flour and mix well. Chilling overnight is preferred; otherwise at least two hours
Topping:
3 tablespoons sugar
1 tablespoon cinnamon
Preheat oven to 375°F.
Combine topping ingredients in small, shallow bowl. After chilling, shape dough into balls about 1 ? inches in diameter. Drop dough balls into topping mixture and coat entire surface well. Place on ungreased baking sheets about 2 inches apart.
Bake in a 375°F degree oven for 10 minutes or until golden brown. Let stand one minute and remove to cooling racks. Enjoy!
Makes about 3 dozen cookies.

No Bake Cookies
Mix:
2 c. sugar
1/2 c. milk
1/2 tsp. salt
2 heaping tbsp. cocoa
Bring to a boil and boil 1 1/2 minutes, then remove from heat and add:
2 tbsp. vanilla
1/2 c. peanut butter
2 1/2 c. oatmeal
Spoon onto wax paper IMMEDIATELY and let cool. Enjoy!
