Tasty potatoes to accompany anything-

You will need.
4-5 medium potatoes, cleaned and cut into bite size(or bigger) pieces; leaving the skin on.
fresh ground pepper
salt (kosher, sea or table, I've used them all)
Lawry's Garlic Salt or any variation- if not using garlic butter, garlic granules is just as good
1/2 cup butter; divided

Put the cut potatoes into a microwave safe dish.
Sprinkle your desired amount of pepper, salt & garlic salt.
Place 4 tablespoons of butter on top of potatoes.
Microwave covered for 8 minutes.
Season with more pepper, salt & garlic salt; stir and place remaining 4 tablespoons of butter on potatoes.
Microwave 8 minutes more,

Smothered chicken-yummy!

You will need
large onion, cut into 1/2-inch dice
1 large onion, cut into 1/2-inch dice
2 teaspoons olive oil
1 head garlic (unpeeled)
1 red bell pepper, ribs and seeds removed, cut into 1/2-inch chunks
1 tablespoon tomato paste
4 boneless skinless chicken breast halves
2 teaspoons paprika
coarse salt
ground pepper
3 tablespoons reduced-fat mayonnaise
2 teaspoons fresh lemon juice


In a 2-quart microwave-safe dish, toss onion with oil.
Place garlic in the center, cover and microwave on high 5 minutes.
Stir bell pepper and tomato paste into onion.
Rub chicken with paprika and 1/2 teaspoon each salt and pepper Place on vegetables w/the thickest part facing edge of dish.
Microwave on high 10 minutes or until chicken is cooked
Remove chicken.
Remove garlic, slice off top, and squeeze cloves into small bowl.
Add mayonnaise and lemon juice; mash with a spoon.
Stir garlic into vegetables; spoon onto plates serve chicken on top.

And also you can do all the usually readymeals /soups etc on top of your new recipes.

I have some ideas for you:

Instant rice & sausage
Lipton noodles & rice
Oncore salsbury steak & veal parmasian
Egg rolls and rice
Banquet meals
Ramen noodles

If you go to the frozen section of your local grocery section, they actually have a lot of items that can be microwaved. Good luck!

Speedy Jambalaya
1 (5 ounce) can chicken breast
1 (3 ounce) link Cajun-flavor smoked sausage or other smoked sausage
1 (4.4 ounce) package Uncle Ben's Ready Rice, Spanish Style
1/2 teaspoon Creole or Cajun seasoning, or to taste (optional)

Drain chicken; place meat in a 1-quart, microwave-safe bowl.

Cut sausage into bite-size pieces; add to chicken.

Open rice pouch and pour into same bowl. Microwave on HIGH for 90 seconds. Taste, and stir in Creole seasoning, if using.

Makes 2 servings.

Frozen dinners are delicious now so don't be afraid to try them. BUT always stick to the top brands. We often use Stouffer's (no preservatives in their foods now), Marie Calendar, Michael Angelo, Boston Market. All can be put into the microwave.

There are now lots and lots of meats and meals in cans and other shelf containers that are for microwaves. Have a store clerk or manager take you around and show you what they have now. Don't be shy, they are there to help the public.

You can make meatloaf in the Microwave. I think it takes about a 1/2 hour or so. Make same way as usual just put in microwave safe dish and heat!

MICROWAVE MUSHROOM BURGERS

1 lb. lean ground beef
1 (4 oz.) can sliced mushrooms
3 tbsp. finely chopped onion
3 tbsp. finely chopped chives
1 tsp. garlic salt
Dash black pepper
1 egg
2 tbsp. butter
Hamburger buns, for serving
Lettuce, tomatoes, pepper rings for garnish

In a microwave dish, combine mushrooms, onions, chives, black pepper and garlic salt. Microwave at MEDIUM power for 3 minutes. Let stand 3 minutes for flavors to blend. Reserve some mushrooms for garnish.
Combine beef, mushroom mixture and egg. Shape mixture into 4 even patties. Place onto micro-safe rack or pan. Microwave at HIGH power for about 2 minutes. Let stand for 2 minutes. Turn patties over. Microwave on other side for 1 1/2 to 2 minutes or until done to your liking. Serve on hot buns. Garnish with reserved mushrooms, tomato slices, pepper rings or other condiments of your choice.

Makes 4 servings.

4 LAYER DINNER (Microwave)

10 oz. chopped spinach
2 c. cooked rice
1 c. Swiss cheese
1 egg
1 lb. ground beef
1 can tomato paste
1 env. mushroom gravy
2/3 c. water
**Microwave spinach 3-4 minutes in package; drain well.
In 12x8 dish, put rice. Microwave high 1-2 minutes.
**Stir in 1/2 cup cheese and egg. Press into bottom.
**In another dish 3-4 minutes High - rotate 1/2 way.
**Crumble ground beef; 3-5 minutes; drain.
**Add all but spinach and cheese. Spoon over rice. Top with cheese. Microwave 5 minutes, medium, 4 - 7 1/2 minutes.

The first site I give is not a recipe but hints on getting microwave food to come out like other methods, how to find your microwave's cold spots, and other good info. I think from that it makes it possible to adjust other recipes to microwavable recipes.
I got the following recipe from Nancy's kitchen site below. there are others. scroll down to main dishes.
On the southernfood.About.com site, below the recipe there are links to other microwave recipes. All of these sound delicious to me and not too hard, but definitely take a little prep, more than a frozen dinner, but much more tasty and satisfying. I haven't tried any of these because i like cooking on stove and in oven and slow cooker, but i can picture circumstances that could change all that. Good luck!
BEEF CORN PIE
3/4 lb. of ground beef
1 sm. clove garlic (chopped very fine)
1 (8 oz.) can whole tomatoes drained
(save 1/2 c. liquid)
1/2 tsp. salt
1/2 c. shredded cheddar cheese
2 tbsp. chopped onion
1 (8 oz.) can whole kernel corn
12 pitted olives, (optional)
2 tsp. chili powder
1 egg
1/2 c. yellow corn meal
Dash of paprika

Crumble ground beef into 1-1/2 quart casserole, add onion and garlic. Cover loosely and microwave on high (100%) 2 minutes. Break up beef and stir. Cover and microwave on high until beef is not pink, 2 or 3 minutes. Drain excessive fat. Stir in tomatoes, corn, olives, chili powder and salt. Cover tightly and microwave on high until mixture is hot and bubbly, 4 to 6 minutes. Stir. Beat egg in bowl, stir in corn meal and reserve tomato liquid. Pour over meat mixture. Sprinkle with cheese and paprika. Microwave uncovered on high until topping is no longer doughy, 3 to 6 minutes.

Boil some pasta and warm a can/jar of spaghetti sauce to dump over it! Serve w/salad or garlic toast. Also you can cook rice in the microwave which is a great, inexpensive filler/casserole maker. My daugther loves it with cream of chicken soup mixed in. If you must have meat, canned chunk chicken mixes well with lots of pasta/rice dishes.
