Rose's Smoked Butt?!
Answers: What can I do with a smoked butt besides the traditional cabbage dinner?
Navy bean soup...
1 smoked butt (3-4 lbs)
1 medium onion minced finely
1 or 2 celery stalks minced (or 1 tbs of celery flakes)
1 tbs freshly ground coarse black pepper
1 tsp of cayenne or ground red pepper
1 1/2 lbs of navy beans
1 1/2 cups baby carrots cut into tiny wheels
1 - 1 1/2 tbs of ham base
1 bay leaf
1 or 2 tbs of sugar (optional)
1. Rinse and sort beans. In large pot, add 2 quarts of HOT water.
2. Add beans and bring to a boil for five - ten minutes. Turn off heat and let beans sit in pot for one hour.
3. Drain and discard water from beans. In large pot add 2 fresh quarts of HOT water.
4. Set heat to medium-high. Add ham base and dissolve. Add smoked butt, make sure to remove paper covering!
5. Add onions, carrots, cayenne or red pepper, black pepper and celery or celery flakes. Stir in navy beans. Add bay leaf.
6. You may have to adjust water level, until smoked butt is almost covered in water. Let boil on medium-high for 20-25 minutes stirring frequently.
7. Reduce heat to simmer. Simmer for 2-3 hours rotating smoked butt and stirring soup often. After cooking at least an hour, you may want to add more black or cayenne pepper to taste. If more onion flavor is desired, add some onion powder.
8. Cook until beans almost fall apart. (I mash some of the beans against side of pot to thicken soup about 20 minutes before serving!)
9. Remove and discard bay leaf.
