I'm thinking it might be better to use one packet of Good Seasons Zesty Italian dry dressing mix. Drizzle your cut potatoes with some olive oil, and then sprinkle on the seasoning before roasting them.
Just a thought.

Did it gave good flavor to potatoes and helped with cooking, another suggestion is to soak skin and all in water over night before dicing cooks a little faster and makes good mashed potatoes..

Definitely. I also heard that butter lightly spread with salty cream will definitely give the potatoes an undertaste that's to die for.

I think cooking in the dressing wouldn't be a good idea, as I am certain the flavour would change.
It might be nicer, but I don't think so.

Yes, I have. It depends on the dressing use, but generally the results are alright. Nothing to write home about.

i think that would be okay. sometimes the italian is just too overpowering and can ruin the taste of the food you are using it on. my favorite thing to do with red potatoes is to dice them, put them in a mixing bowl. cover them olive oil, salt and pepper and little rosemary. you can use fresh or dried rosemary. then pop them in the oven and roast them till they are nice and soft. soooooo good.

Try this:

Roasted Cajun Potatoes

2 1/2 pound red potatoes (wedges)
1/4 cup olive oil
2 shallots, chopped
1 garlic clove, minced
1 teaspoon salt
1/2 teaspoon paprika
1/2 pepper
2 tablespoon mined fresh parsley( sprinkle last)

450 degree
30-45 minute (flipping every 15 min.)

This is soooo good. My husband and daughter loves this
