Making dinner for fiance...need MEATBALLS?!


Question: I dont know how to make meatballs, i dont have ne bread crumbs. I have the meat, eggs, all kinds of seasoning...what else? are bread crumbs required...and egg too? any help is appreciated. I want to have everything finished when he gets home. thanks a lot.

You can use finely crushed saltine crackers instead of bread crumbs. Here's a good meatball recipe that doesn't use egg, although most meatball recipes do call for at least one egg:

1 1/2 cups chopped onion
1/3 cup ketchup
3 tablespoons lemon juice
1 tablespoon Worcestershire sauce
3/4 cup crushed saltine crackers
3 pounds ground beef

In a bowl, combine the onion, ketchup, lemon juice, Worcestershire sauce and crackers. Crumble beef over mixture and mix well. Shape into 1-in. balls. Place in ungreased 15-in. x 10-in. x 1-in. baking pans.
Bake, uncovered, at 400 degrees F for 10 minutes or until meat is no longer pink. Serve meatballs immediately, or refrigerate or freeze for use in other recipes.

I love this meatball recipe:

1/2 pound ground veal
1/2 pound ground pork
1 pound ground beef
1 cup fresh white bread crumbs (4 slices, crusts removed)
1/4 cup seasoned dry bread crumbs
2 tablespoons chopped fresh flat-leaf parsley
1/2 cup freshly grated Parmesan cheese
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
1 extra-large egg, beaten
Vegetable oil
Olive oil

Place the ground meats, both bread crumbs, parsley, Parmesan, salt, pepper, nutmeg, egg, and 3/4 cup warm water in a bowl. Combine very lightly with a fork. Using your hands, lightly form the mixture into 2-inch meatballs. You will have 14 to 16 meatballs.
Pour equal amounts of vegetable oil and olive oil into a large (12-inch) skillet to a depth of 1/4-inch. Heat the oil. Very carefully, in batches, place the meatballs in the oil and brown them well on all sides over medium-low heat, turning carefully with a spatula or a fork. This should take about 10 minutes for each batch. Don't crowd the meatballs. Remove the meatballs to a plate covered with paper towels.

Well you need something to help bind the meat and eggs together or else the hamburger breaks apart. Are you doing something with pasta? Why not just scramble up the hamburger in bigger pieces and just top your spaghetti or put it in the pasta.

i put rice in my meatballs...just rice...salt and pepper...cook over med low heat...i make them in tomato soup...serve with potatoes....

Do you have stuffing mix (the dry kind)? That will work as good as bread crumbs. Or, if you have regular bread, just toast a few pieces (no butter) and then crush it up and make your own bread crumbs. You do need an egg to help bind it all together. Add some finely diced onion and garlic if you have any to the meat mixture, salt and pepper and (this is great!) the zest of a lemon (just a little) if you have one. My husband makes them this way and they are fantastic.

You need eggs tho and crackers..
Crush the crackers, add one whole egg. mix with hands, season to taste and roll in little balls.. Cook

You don't need bread crumbs at all. Just mix the meat with an egg, and a little milk or ketchup until it all holds together. You won't need much. Mix in whatever seasonings you want. Bake for about 15 minutes or until done, and then you can serve as is or simmer them in a sauce if you like!

EASY MEATBALLS

1 lb. ground beef
5 slices white bread
Garlic salt
Onion salt

Place beef in bowl. Saturate each slice of bread. Squeeze slightly and drop in bowl. Add garlic and onion salt. Amount personal preference. (I use approximately 1/4 teaspoon of each.) Mix thoroughly, roll into balls and simmer for approximately 30 minutes in spaghetti sauce or gravy.
