I'd say use your own judgment, cook it long enough for it to me tender and moist, but not too dry on the outside. Use a meat thermometer if you need to. for 2 lb i should think 2 hours is enough... make sure you put a little water in the base of the dish and cover it with foil When it comes out let it rest alot before slicing.
brisket is a tough piece of meat and needs a long cook time. Almost the longer the better. You want it to be really tender. How are you cooking it? In the oven?
What type of cooking are you using? as noted in the previous post yes, the brisket is a tough peice of meat. It is best to braise such a cut. the proper way to braise would be to first cook off whatever veg you will be using, remove them form the pan and then brown ALL EXPLOSED SIDES of the meat well in the bottom of a pan where liquid can fully submerge the meat. remove the meat and deglaze the pan, then reintroduce the meat and veg to the pan, cover and place in the oven. you can also stovetop braise, but it is much harder to regulate and control the temperatures. the meat will be "done" when it reaches an internal temp of 165 deg. F, but does not ensure tenderness or palatablility. You can cook it longer, but the rule of thumb is cook until "fork tender" meaning when you peirce it with a fork, there is virtually no resistance and the meat literally falls away from the bone and itself. this can take hours, so do noot be suprised or think that you will over cook it, as it is difficult to do so with a braise.
