8 oz cream cheese at room temp
8 oz sharp cheddar shredded at room temp (med will work if you don't have sharp)
diced onion and green pepper (maybe 1/4 total)
salt
pepper
worchestershire sauce to taste - 4-5 shakes
mix all well together and place in fridge to firm
roll in ball, then roll in chopped pecans
YUM

this gets raves....

Cheese ball with pecans and maple syrup

1/2 container of Imperial sharp cheese (in the red plastic container)
1/2 large brick of cream cheese
a rounded teaspoon of Miracle Whip, and
about 1/2 bag of pecan pieces - toasted.

Easy to double as you can see, depending on crowd size.
Soften the first three slightly in the microwave just until you can combine them smoothly. Form into a mold on the plate and then let harden in fridge.
I started the night before - toasted the pecans, put the cheese mold in the fridge to harden. Took it out about an hour beforehand to put the toasted nuts on (just press pieces into top and sides) and let it soften a bit, then poured the syrup on just before serving. I use the "15% real" version, either Aunt Jemima or PC, whichever is cheapest.

mix and roll into a ball. Roll in a mixture of crushed toasted walnuts and serve with fruit (apples, pears or grapes).

i tried this recipe. not exactly cheeseball but cheese straws. you can serve this with a cream cheese dip
this is the recipe:

2/3 cup all purpose flour
1 tsp baking powder
4 tbsp butter
3 oz cheddar cheese (grated)
salt and freshly ground pepper
1/2 cup milk

method:

sift flour and baking powder into a large mixing bowl
rub the butter into the flour and then add the cheese
season with salt and butter
stir in enough milk to make a stiff dough
roll out the dough into a thin sheet
cut long strips with a knife
place on a greased baking sheet and bake at 400 degree faranhite. serve at room temp

for the dip:

bring cream cheese to room temperature
empty it out in a bowl.
add tobascco, salt, pepper, chopped coriander, and little bit of cayenne pepper. whip everything up
serve it as a dip with the straws

great for parties

here is a sweet cheese ball.

soften cream cheese, add 1 cup powder sugar, and 1 cup chocolate chips. form into ball serve with graham crackers or vanilla wafers
