When using lime or orange essence how do you grind up the skins?!

You can use a small gadget called a zester. It looks like a fork except instead of tines it has about 5 small holes across the top. You can drag it across the skin of citrus fruit to get the zest without the pith. I have also tried using a potato peeler and chopping the zest into fine pieces. Try looking in the kitchen gadget aisle of your local grocery store.

or
you could use the finest side of your cheese grater. Which can be really tough to clean.
and remember not to go all the way to the white (pith) of the skin, just the yellow or orange.

you don't grind them, use the finest part on your box grater or get a zester
