What do I look for at the meat counter when looking for pork spare ribs?!
Answers: I hardly EVER cook meat. But this Saturday I'm having a Mardi Gras party and am attempting to make Red Beans and Rice. The recipe calls for 4 to 5 medium Pork Spareribs. What the heck are those? I mean, I know what ribs look like - but I'm the girl that only buys ground turkey and chicken breast. What do I look for at the meat counter?? Thanks!
go to your butcher and ask for pork spareribs. tell him you want the rib tips and the tenderloin cut off.
the rib tips are the piece of meat and cartilidge that extends beyond the end of the rib bone. and the tenderloin is the piece of solid meat that runs along the back side of the rack,
after taking those off a good rack of "st louis" style ribs (which is what you now have), should weight about 2- 2 1/2 lbs, if you only need 5 ribs, just ask your butcher for half a rack.
in hindsight...why do you need ribs for red beans and rice??? if you are just looking for pork flavor, you can substitute bacon ends or fatback and it will taste just as good
Pork Spare ribs are bones with little meat in them, usually a big size meat about 4 to 5 lbs. You can also try boneless pork ribs, just go up to the counter and it should say on the label "Pork Spear ribs" make sure you ask the butcher to seperate the ribs because if you don't u will have to do it yourself and it will take some time.

out pork spare ribs and tell about your dish ,
they will help you decide, or cut what you need.
Make sure u don't buy the beef ribs they taste totally different. If you don't want to do the ribs, ask the butcher what other pork product u could substitute. Since u only need 4-5 ribs, and ribs aren't that meaty, I think u could use something else.
