I put green beans in my sauce and I know it does not sound good but it add something awesome to the sauce.
Roasted almonds instead of ground beef!
Basil & Oregano are both great for flavoring Spaghetti Sauce...
I add a liitle sugar to cut down on the acidy flavor.

I've used fresh basil leaves with good results. I've also used a bit of sugar so it's not so acidic. Also, ground beef and sausage being cooked in the sauce does a nice job.
Like my mom, I add about a half cup of grated mozzarella cheese...it makes the sauce thicker and deepens the flavors. She used to call it her "Irish spaghetti sauce."

Depending on how much you make, I ususally use a whole stick of butter.
It cuts the tanginess and gives it an awesome flavor.

Cinnamon or nutmeg - try it
Cinnamon makes it extra yummy but it has to have lots of garlic first.
Melt in some cheddar cheese also makes if more hearty.
Even in quite a plain tomato, garlic, meat sauce, cinnamon or nutmeg add a back flavour hint that people will not know what it is - makes it yummy.
You loved Maggie saying use Oregano ????- sorry that is in no way unique - every spaghetti sauce has oregano - I don't get it did I miss something - is there another Maggie here that I don't see?

I finely shred a carrot into my sauce, it helps cut down the acidity.
small amount of brown sugar, and ranch dressing or ranch dressing mix that comes in powder form. ranch also works great as a secret ingredient in chili.

LOTS of fresh garlic
A pork roast. No kidding:
1 pork roast (2 pounds)
2 - 29 ounce cans of tomato sauce
3 - 8 ounce cans of tomato paste
1 onion, diced
Oil
1 - 2 teaspoons salt (or to taste)
1/4 teaspoon fresh ground pepper
dash of garlic salt or a clove minced
(depends on how much garlic you like)
1 cup sugar

1) saute the onions in oil
2) add pork roast and sear all sides
3) add the tomato sauce & paste
4) add a can of water for each can of sauce & paste
5) stir till blended & add the seasonings
6) raise heat and bring to a boil
7) lower heat to med and stir every 5 minutes for about 15 minutes or so.
8) turn heat to low till ready to use.
9) remove roast, and refridgerate for tomorrow's dinner.
10) serve sauce with meatballs, freeze the extra.

a little bit of brown sugar plus many other ingredients my mom always put in hers. Yum. I'm getting hungry just thinking about it.

Red pepper flakes, but not too much. When cooked the flakes release oils and get hotter. Just a pinch and it will be a nice touch for sauce that even people who don't like spicy food can enjoy.
1 thing? I have a lot of favorites, but you asked for one ingredient. Oregano. Now you got me craving Italian. :)

Funny you ask, chic! I'm making spaghetti tonite! I put the following ingredients in mine: grd beef, italian sausage (sliced thin), 1/2 green pepper, sliced italian seasoned tomatoes (can), meat sauce, onion, mushrooms, garlic or powder, basil & oregano, pepporcorn pepper, little sugar (cuts acidity) - yyyuuuummmyyyy! Oh! Can't forget the shredded parmesan! Girl....a meal alone! Are you a mixer? Mix spaghetti in with meat? I used to, no longer. I keep my separate so I can freeze any leftover sauce! I'm gonna throw some celery in mine tonite...

**finely shred small fresh carrot, 1 ea. / or 1 spoon full

or more, instead of tomato sauce, and catch up!.
**some,1/2 stick fresh butter,or natural fresh milk cream ,
say :1 spoon full .
