There are so many recipes out there for Entree-type salads that include all the fixings for a balanced diet. Buy all the ingredients a few days in advance and hold the dressing in a seperate miniature tupperware or lidded plastic cup so the lettuce doesn't get soggy. Don't forget to thoroughly spin dry or towel dry the lettuce- which also makes for an unappetizing salad. Assemble the night before and take it to work. You can make egg salad, chicken salad, tuna salad. Buy those Lunchable packs sold at grocery stores that make for convenient light lunches. How about granola bars, fruit cups, jello, or pudding? Microwaveable soups? OR How about making hummus and eating it with purchased pita chips?http://allrecipes.com/Cooks-Profile/Favo... If you do all the prep in advance there's little to worry about. Also, If your workplace has a microwave, I'd splurge one day and bring a washed, raw potato to nuke until done. You can bring your own sourcream, butter, cheese, bacon bits, ect. Just be sure to prick it all over with a sharp object to relieve that steam and pressure.
All the best healthy meals are made simply from natural ingredients. Why do people try to get so complicated nowadays? Who are they actually trying to impress?

Tuna salad no heating at work necessary.
Recipe; elbow noodles,tuna,sweet peas, mayo.
chicken sandwiches are always good for left over. just slide a chicken breast you have cooked between a little bread and maybe a little ranch. try and break it all up with some fruit or good soup a bag salad and a little chicken or whatevers left in the fridge. I usually pull together a few good grab and go's from left overs. Just plan on cooking for 1 more at night or a couple nights a week and bring whatever you got for lunch. crockpots have been my cooking pal for years cook at night while you sleep and wake up to a great smell and put lunch in some plastic tub and the rest in the fridge for dinner...
Salads can be refreshing and easy. You can try a variety of combinations of greens, veggies and dressings to see what your favorites are. My favorite item to pack for lunch is crackers and cheese. It may sound boring, but there are so many varieties! You can choose almost any kind of cracker and use slices of cheddar, swiss, brei, blue cheese, italian cheeses or varieties such as sharp cheddar, and flavored cheeses. You can also use cream cheese. Add a little pesto or try the many varieties at the grocery store. Yum!
A good healthy recipe would be taking left over chicken and left over white rice, and making a vegetable fried rice, like what you find in the Chinese restaurant. Cut the chicken into small pieces, stir fry it( with peppers optional), add the rice, and a little bit of soy sauce. This takes no more than ten minutes, since your ingredients are already cooked.
