Apple Pineapple Dessert Pizza

1 (10-ounce) can refrigerated pizza crust
1 (15 1/4-ounce) can crushed pineapple
1 (20-ounce) can apple pie filling
1 teaspoon cornstarch
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 1/2 cups (6-ounces) shredded sharp cheddar cheese
2/3 cup all-purpose flour
1/2 cup firmly packed brown sugar
1/4 cup butter or margarine
1/3 cup finely chopped dried apricots
Press pizza crust into a lightly greased 11 x 7-inch baking dish.
Bake at 425*F (220*C) for 7 minutes; cool.
Drain pineapple, reserving 1/3 cup juice. Combine pineapple and pie filling.
Stir together reserved pineapple juice, cornstarch, cinnamon, and nutmeg; add to pineapple mixture. Spoon evenly over crust; sprinkle with cheese.
Combine flour and brown sugar; cut in butter with a pastry blender until crumbly. Sprinkle over cheese. Top with dried apricots.
Bake at 450*F (230*C) for 10 to 12 minutes or until golden.

Try buying a pre made sugar cookie dough spread it out and add caramel, chocolate, nuts, fruit, etc.

I usually make two kinds of 'dessert' pizzas.

First is the delish fruit pizza pie using a sugar cookie base either packaged or 1 full recipe of sugar cookie, then spred softened 8 oz cream cheese over baked and cooled dough that is on the pizza pan; in decorative and circular fashion make rings of fruit, such as a row (ring) of sliced green grapes, a row of mandarin orange segments, sliced kiwi, pineapple and then if in season, (or avail now in your supermarket) use blueberries and or strawberries, making the pan full to your desire. Take 1/2 cup of apricot jam and warm it until it is liquid-ish, spred over the fruit giving it a beautiful glaze. Cut into wedges and serve. (You could also use sliced bananas if using the glaze and serving quickly)

Again make a cookie sugar dough or your favorite oatmeal cookie dough. spred on pizza pan and then top with m&m's, mini marshmellows, plain peanuts , coconut (whatever you like) and bake. When cool, you could drizzle melted white or milk chocolate back and forth for a wonderful 'cookie pizza' Cut into wedges and serve with a glass of milk, hot cocoa or favorite drink!

Enjoy.
