Do you know how to make....?!


Question: Do any of you have a recipes for those Carmel Apple Empanadas from Taco Bell? Or Do you have a recipe for anything simalar? I have some apples that are getting old so I wanted to make some thing out of them, and my family loves those Empanadas...

But if you have any recipes for something simple the have apples in it, that would be great!

Apple Empanadas

1? hours 1? hours prep

Pastry
2 cups flour
1 teaspoon salt
1 cup shortening
6-7 tablespoons water
1 egg, beaten (to be used later)
Apple filling
2 large apples, peeled and diced
1/2 cup apple cider
1/2 cup granulated sugar
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 cup raisins (these are optional)
1 tablespoon cornstarch
Cinnamon or sugar mixture
1/4 cup granulated sugar
1/2 teaspoon cinnamon
OR t tablespoon carmel topping mixture to the apple mix per fruit pocket

Pastry:.
In a medium bowl, mix flour and salt; cut in shortening until crumbly. Stir in cider until completely moistened. Divide pastry into 2 equal portions. Roll out each portion thinner than you would for pie crust. Cut into circles with a 3-1/2" biscuit or cookie cutter.
Apple filling:.
In a medium saucepan, simmer diced apples, cider, sugar, cinnamon, and nutmeg over low heat until apples are soft. In a small bowl, mix cornstarch with enough water to form a thin consistency; stir into apple mixture and cook until mixture thickens.
Assembly and cooking:.
Brush pastry circles with beaten egg. Place a small spoonful of apple mixture in center of each circle. Fold pastry over filling to form a half circle. Press edges together with a fork to seal.
Heat 1 cup of cooking oil to 400 degrees in an electric skillet. Place several empanadas in hot oil at a time, cooking on one side, and turning over when golden brown. Cook second side until golden brown. Remove and drain on paper towels.
Sprinkle tops of empanadas with cinnamon and sugar mixture.

Caramel Apple Empanadas recipe
1 (36-count) package frozen roll dough, defrosted
according to package directions
10 caramel candies, each cut into 4 pieces
1/3 cup all-purpose flour
3 cups peeled, chopped apples, peeled
2/3 cup caramel ice cream topping
2 teaspoons lemon juice

Lightly grease 2 baking sheets.

Combine caramel pieces and flour. Add apples, caramel topping and lemon juice; mix well.

Place dough for one roll on lightly floured surface; roll into 4-inch circle. Spoon about 2 tablespoons apple mixture onto lower half; brush edges with milk. Fold dough in half; crimp edges with fork. Repeat with remaining dough. Brush each empanada with butter; sprinkle with cinnamon sugar. Place on prepared baking sheets. Set aside.

Heat oven to 375 degrees F (190 degrees C).

Bake empanadas for 15 minutes or until golden brown; serve warm with vanilla ice cream and caramel sauce.

Makes 36.
