If your don't have a scale. Check the package it came in. It will always state what the total weight is. Three good size chicken breast, boneless and skinless will run about 3 1/2 pounds. Cut one big breast in half and you're looking at about 4 to 6 oz. depending on size. With a kitchen scale it won't be exact, but close enough. Yes, what fits in the palm of the hand is generally considered a single portion, but usually doesn't consider weight per say.

I believe 1 oz should fit in the palm of your hand I've been told.

4 oz should be about the size of a deck of cards. (in thickness as well as size)
