Sure you can. In fact, if you are going to do that, the best way to do it is to freeze it in separate freezer bags, so that you don't have to thaw too much at one time, for use. You can do this with just about any fruit or vegetable. Use the frozen pumpkin in muffins, pies, cakes, breads, soups, or anything you like. It's easy to thaw in the microwave. Add chicken broth, salt, pepper, and onion powder, and you've got pumpkin soup. Delish!

Store any vegetable or fruit in the freezer up to 1 year. Any poultry product, up to 6 months. Pork products 6 months. Fish should be used in 3 months. Ground beef up to a year.

It's great to hear that you are wanting to cook all of that pumpkin so that none of it goes to waste. Wonderful idea!

Frozen pumpkin is good for about a year, just like most other frozen vegetables, assuming they are properly packaged. Note that if the veggies thaw or partially thaw you must then use them right away.

I did this last Halloween. It worked pretty good. the only problem I had was the pumpkin seperating while it thawed. I put it a big bowl and used my elctric mixer to get it all mixed back together completly!
