Can you please share some simple middle eastern style recipes?!


Question: I am interested in some simple middle eastern recipes, if you have some to share. I need the recipe, including the measurements to be in American english, because I don't know how to convert from other languages. Thank you for that.

When I think of Middle Eastern, I am thinking of Iran, Iraq, Israel, Pakistan, Lebanon, Syria, Egypt, Jordan, Saudi Arabia.

So if you have any recipes to contribute from these lands, and they are not too complicated, I would love to learn of them.

Don't let the long list of ingredients scare you, this is actually an easy recipe:

Chicken Tikka Masala

Marinade:
1 cup yogurt
1 tablespoon lemon juice
2 teaspoons ground cumin
1 teaspoon garam masala
1 teaspoons cayenne pepper
2 teaspoons freshly ground black pepper
1 tablespoon minced fresh ginger
1 teaspoon salt, or to taste

3 boneless skinless chicken breasts, cut into bite-size pieces
4 long skewers

In a large bowl, combine yogurt, lemon juice, cumin, garam masala, cayenne, black pepper, ginger, salt. Stir in chicken, cover, and refrigerate all day.

Sauce:
1 tablespoon butter
3 cloves garlic, minced
1/2 jalapeno pepper, finely chopped
2 teaspoons ground cumin
2 teaspoons paprika
3 teaspoons garam masala
2 8-oz cans tomato sauce
1/2 teaspoon salt, or to taste
1 3/4 cups heavy cream
1/2 cup chopped fresh cilantro

Preheat a grill for high heat.

Lightly oil the grill grate. Thread chicken onto skewers, and discard marinade. Grill until juices run clear, about 5 minutes on each side.

Melt butter in a large heavy skillet over medium heat. Sauté garlic and jalapeno for 1 minute. Season with cumin, paprika, garam masala and salt. Stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 minutes. Add grilled chicken, and simmer for 10 minutes. Transfer to a serving platter, and garnish with fresh cilantro.

chicken tika masala is in fact Indian......sorry i cant help you...can toss you a few australian or even bulgarian recipes iff you like......
