I give the chicken a wash under cold water and dry with kitchen towel.
I then get an onion, lemon and some sage leaves. Chop the onion and lemon in half and shove into the cavity of the chicken....add the sage leaves if you have any.
Place chicken into a roasting dish and rub all over with a little butter or margarine.
Place foil loosly over it and set on 160 for about an hour.
Remove foil and turn temperature on oven up to about 180 then cook until the chicken is nice and brown.
Remove from oven and make sure it's cooked - there should be no blood or reddish flesh - it should be white.
If you want extra crispy skin the rub all over with salt before putting into the oven.

I use a small roater pan and put the washed chicken inside. I add about 1 cup water and some onion slices. You can sprinkle with a little salt and pepper if you want or a little seasoning salt. You can even use a little Italian seasoning or sage, etc....
Then I put the lid on and roast for a few hours. Most of the chicken packages will give you an idea of how long to cook and at what temp based on the weight of it.
The last hour to half hour I take off the lid to get the skin nicely browned and crispy.
If yo do not have a kitchen thermomitor then roast the maximun time on the label and then cut into the breast meat to make sure it is cooked and there is not any "pink" left.
I really don't have to baste it much especially with the lid on. It keeps it plenty moist.
You can even peel and cut up potatoes and put them around the bottom. I sprinkle a package of Lipton Onion mushroom soup on them ( the potatoes only) and add a few tsp of margerine or butter around them. They roast up wonderfully along with the chicken juices. Make sure you put them in right in the beginning so they have a long time to cook and get tender. Yum!
You can even add some raw or frozen carrots along the edges about 1/2 way through cooking.........and make an entire dinner in one pot!
I boil my chicken, I am new at the whole cooking thing so...I haven't tried it in the oven yet LOL
but when I boil it omg does it taste so moist and great!
but of course I am making chicken and dumplings when i do that
