Question: BBQ SHRIMP
from the Royal Cafe, New Orleans
One of New Orleans most Famous Dishes
Serves 2

Ingredients:

1/2 Pound Unsalted Butter
24 Large Shrimp/Prawns (Whole with the heads on)
3 Tablespoons Black Pepper
1 Tablespoon Chopped Fresh Garlic
1 Tablespoon Chopped Fresh Rosemary
1 Whole Lemon
1 Teaspoon Lea & Perrin - Worchestire Sauce
3 Ounces Beer
1 Teaspoon Chopped Fresh Parsley
Cooking Directions:

In a hot skillet put 1/8 pound of butter & 1 teaspoon black pepper and cook for 10 seconds. Add shrimp, toss & cook for 1 minute. Add garlic, rosemary & toss & cook for 1 minute. Add Lea & perrin & squeeze lemon over shrimp, cook for 1 minute. Add beer & toss, cooking until the beer boils. Add remaining butter & parsley until butter emulsifies.

Easy Bar-B-Q Shrimp

Fast and fuss free! This incredibly delicious shrimp over rice will be the best you've ever eaten!

3 lbs medium fresh shrimp (peeled)
1 cup butter
1/2 teaspoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red peppers
2 teaspoons pureed garlic
1 teaspoon thyme
2 teaspoons rosemary
1 teaspoon celery salt
1 teaspoon olive oil

Peel shrimp and place in a 1-1/2 quart baking dish.
Preheat oven to 450 degrees.
In a sauce pan, melt butter, and all the seasonings above and pour over the shrimp.
Cook in oven for 20 minutes.
Serve over rice.

INGREDIENTS
2 pounds LARGE shrimp, uncooked, pull the skin/tails off
1 finely chopped onion
1 cup olive oil
1 tsp sugar
1 tsp cayenne peper
1/2 tsp salt
1/2 tsp oregano
1 tsp garlic powder
1/4 cup Maple Syrup
Optionally a pound of bacon


DIRECTIONS
In a large bowl, mix everything togather (except bacon) and then add shrimp.
Leave it in the fridge overnight (PREFERABLE) or at least for several hours.
Flip occasionally to distribute shrimp marinade. Pull out from fridge an hour or so beforehand to let things warm/loosen up a bit.

The next day, preheat your bbq grill while skewering the shrimp.
Optionally place flat on a fine-screen mesh cookware - less work!
Wrap in bacon and grill. Be careful about flames from the dripping marinade.
Serve over rice, pasta, or as-is ... but be sure to drip some marinade on 'em!

P.S. As mentioned earlier, bacon is only optional. This tastes delicious even without it.

Buy the biggest fresh shrimp you can afford. Shell and devein. Marinate shrimp in bottled Italian dressing for 1 hour to 1&1/2 hour. If you marinate a long time it makes the shrimp too macerated like ceviche. Thread shrimp on skewers and cook on a hot grill a few minutes until pink and has grill marks-flip and grill on the other side for a few minutes. Tastes good warm off the grill and also delicious the next day cold.

BAR-B-Q SHRIMP

3 lbs. lg. shrimp, unpeeled
2 sticks butter
1/4 c. olive oil
Garlic salt
Celery salt
1/2 c. rum
Lemon
1/2 c. bar-b-q sauce
Black pepper

Cover bottom of shallow pan with half of melted butter. Place unpeeled shrimp in pan. Pour remaining melted butter on shrimp. Sprinkle olive oil, garlic salt, celery salt, lemon and bar-b-q sauce on shrimp. Sprinkle very heavily with black pepper. Place shrimp under broiler (put pan on center or lower rack) for about 5 minutes. Turn shrimp and broil other side for 5 more minutes. Remove from oven. Sprinkle shrimp with rum. Put back under broiler for one more minute. Serve with French bread (delicious dipped in butter sauce).
