What type of food should i make for my wedding?!


Question: My wedding is in May and we are having the recpetion and ceremony in my parents backyard. Its perfect. The only thing is i am trying to figure out what type of dishes to cook. We are having about 70 ppl and are on a tigth budget so no catering. I dont want to go the route of asking ppl to bring dishes to my wedding because i think it is not very classy. Well anyways i am wondering if anyone has any ideas on what i would be able to make the prior day or two and freeze until the day of. I will have a couple family members prepare the food on the day of so i wont have to. I already though of lasanga but am not set on it just yet.

*Italian sausages, with onions and green peppers cut in peices
*3 bean salad, can buy for $5.00 in large can in local grocery store that has an institution section... walmarts and pick n saves.
* relish trays,
* pasta saladwith Italin dressing
*Itaiian beef
*Baked Chicked or fried. Super Walmarts ahve cheap and very good friend chicken you can pick up that day and put in nescos

You can rent or purchase nescos. Nescos can run from 50-199 dollars. You can also go to a local card store, and for $10.00 get disposable nescos. They even come with the sterno.

The veggies you can palce in bags until the day of, same with the pasta salad and 3 bean salad and lettuce salad.

Rest you can make the day or 2 ahead and warm in oven or in nescos.

Need to stay away from the mayo dishes unless right after you plan on taking time out to put things away.

chicken wings that comes and a bag you can pour homey bbq sause on it

Hot shredded turkey sandwiches(as turkey will go a long way) with some salads.

baked chicken, you could have a whole bunch of trays preseasoned 2 days in advance to be ready to pop in the oven the morning of the wedding. of course the sides can be salad. potatoe salad, cole slaw and rolls. whatcha think!!

or another thing for main course so to not heat up the house is cold cut platter with the sides stated above. that could be done a day or 2 in advanced and it only has to be pulled out.

Why don't you and/or your folks make 3 different types of pasta sauces eg. alfredo, meat sauce, marinara. And 3 different types of pasta eg. angel hair, bowtie, penne. If the pasta has been cooked aldente beforehand, you can simply dunk them in a huge vat of boiling water just prior to serving to cook them through and heat them up.Have grilled Italian sausages, boneless, skinless chicken breasts, and meatballs available on the buffet table so ppl can create their own combo. Offer garlic bread, parmesan, crushed red pepper and maybe a salad bar. This way, different people with dietary restrictions have open options. You may want to consider uncomplicated finger foods to serve as appetizers such as: fried mozzarella sticks, crudites, stuffed mushrooms on toothpicks, mini tea sandwiches, hummus with pita chips if you're going to have a cocktail hour.

We had a big crawfish boil in our backyard at our reception.

Steamed mixed veggy with garlic on chaffer ( found at Costco or Sam or dollar store and sternos)

Mac and Cheesy

Chicken Marsella

Pizza, chips, for the kids

Cocktail shrimp on ice

sparkling fruit punch, ice tea, coffee, beer only

Pick up a cake from Walmart


Or you can buy everything frozen from Costco or Sam.

*Baked mostacolli (a classic)
*Roast Beef (soooo easy & inexpensive to make in a crock pot, i can give u my recipe if u want)
*bbq pulled pork
*garden or ceaser salad
*Chicken vesuvio (yum), or Chicken Marsala (easy to re-heat)
*pasta salad
*A veggie Medley
