I love garlic! I love the taste. I love how easy it is to use, and it does not hurt that it is also known to have a lot of health benefits.

Roasted garlic is really something special. The roasting will softened the taste, almost to the point where it becomes sweet (the sugar caramelizes) while intensifying its distinctive flavor.

And even though it takes a while to cook (about 90 minutes), it is well worth the wait!

Ingredients:

- One garlic bulb

- a teaspoon of olive oil

- salt and pepper

- Parm cheese

To get started, cut off the first 1/2 inch of the top the garlic bulb, so that it will be easy to spoon off the garlic later on (see picture above).

Put in a pan, drizzle with the olive oil, add salt and pepper and cheese and cover or wrap in foil.

Place in a cold oven and set the temperature at 350F for 45 minutes

Uncover and bake for an other 45 minutes

eww me hate garlic

I normally wrap the bulb in foil and bake it for about 45 minutes. It comes out super soft and squeeze the cloves and spread them on bread. Good eatin'!
I try to cook it when I am cooking something else, it is wasteful to fire up the oven for a garlic bulb. Also it keeps well in the fridge. Good luck!!

ROASTED GARLIC

4 large bulbs of garlic
1/4 c. olive oil (x-tra virgin)
1 1/2 c. rock salt

Preheat oven to 425°F degrees, remove most of the skin on the garlic, rub down with olive oil, place in pan, cover and surround with salt, cover bake for 35-45 minutes. Serve on toasted sourdough bread.

I cut off the top stalk/clove points and drizzle grapeseed oil over it, wrap with foil and bake at 400 for 20 minutes.

OR

I cut off the top stalk/clove points and drizzle grapeseed oil over it, place on a dish and microwave covered for 5 minutes - check for doneness, microwave longer if necessary.

Cut the top off the garlic and expose the cloves a little bit. Drizzle olive oil over it and wrap it in foil and bake at 400F for about 20 minutes or until it is tender.

We used to just cut the top off and bake it at about 400 degrees. You can spritz with some oil but it's ok dry too.

We served it with sundried tomatoes, peperoncinis, olives and pita bread.
