'Rainbow' cookies?!


Question: When I was a child my mother used to make me "Rainbow" cookies. I vaguely remember the dough being sort of like a sugar cookie dough, she put it in the fridge or freezer before baking, colored sections of it, then put them all together in a sort of log, that when it was sliced, looked like a rainbow. My mother passed away 10 years ago and my dad does not remember these cookies. Does anyone have a recipe for anything like this?

RAINBOW COOKIES

1 c. soft butter
3/4 c. white sugar
3/4 c. brown sugar
2 eggs
1 tsp. vanilla
3 c. flour
1/2 tsp. soda
1/2 tsp. salt
Food coloring

Mix butter, sugar, eggs and vanilla. Blend flour and salt in separate bowl then add to first mixture. Divide dough into 4 parts and add a different food color to each part.
Roll each color of dough into a strip about 4" wide and 1/4" thick. Stock the strip of dough together. Wrap the dough in wax paper and refrigerate overnight. Slice the layer dough in 1/4" slices, gently curve the slice to make a rainbow arch. Bake on an ungreased cookie sheet in 375 degree oven for about 7 minutes. Yield: 3 dozen cookies.

You can use any sugar cookie recipe you like. Simply divide the dough into equal parts, add food coloring as you like, then roll it together into a log about 3 inches wide. Wrap it in wax paper and refrigerate for 2 - 3 hours.

Then, slice the log into 1'4" pieces and bake as directed in the recipe.

Rainbow Cookies

1 cup confectioners' sugar
1 cup butter
1 teaspoon vanilla
2 1/2 cups flour
4 drops red food coloring
4 drops green food coloring
4 drops yellow food coloring
Peanut butter filling
1/3 cup brown sugar, firmly packed
1 tablespoon flour
1/2 cup water
1/4 cup creamy peanut butter

Peanut butter filling
1/3 cup brown sugar, firmly packed
1 tablespoon flour
1/2 cup water
1/4 cup creamy peanut butter

standard recipe for cookies.
You can add anything as well to your likings.
I even added walnuts to make it crunchy.
You can even add rainbow m&ms to amake it look like a rainbow after you mix it. Try anything to your fancy!
