What white cheese is used for enchiladas in US mexican restaurants?!

Question: I think it is called Asadero? Asanado? Avocado? It is a white cheese I believe. How is it best melted or grated? Is there a trick to using it?

Many thanks all you Y!A cooking gurus!

It is asadero. It is best melted. Careful when cutting it.

I'm pretty sure its monterey jack. Just grate it with a box grater, sprinkle it on, and melt it in the oven.

Asadero cheese is a white mexican cheese. It's expensive so people generally substitute monterey Jack, which melts very nicely.

Monterey Jack or cojita.

queso fresco

Cotija cheese is commonly used. Grate it and use.

in american /mexican rest. its usually monterrey jack or asedero

I think it comes from goats.

u could use that but i use it with monterey jack its good grated is better
