What white cheese is used for enchiladas in US mexican restaurants?!
Many thanks all you Y!A cooking gurus!
Answers: I think it is called Asadero? Asanado? Avocado? It is a white cheese I believe. How is it best melted or grated? Is there a trick to using it?

It is asadero. It is best melted. Careful when cutting it.
I'm pretty sure its monterey jack. Just grate it with a box grater, sprinkle it on, and melt it in the oven.
Asadero cheese is a white mexican cheese. It's expensive so people generally substitute monterey Jack, which melts very nicely.
Monterey Jack or cojita.
queso fresco
Cotija cheese is commonly used. Grate it and use.
