Does anybody know of a good sugar cookie recipe using Splenda packets?!


Question: A friend of mine gave me a whole box of Splenda packets and I am thinking I can use them in a sugar cookie recipe so I can decorate sugar cookies with my daughter. Thanks for all the help, its really moving me along. This has been a big problem with my daughter since the holidays, with her wanting to decorate cookies. I will be happy to solve it in time for Valentine's day which is just around the corner!

This is a very good recipe:


SPLENDA NO-SUGAR SUGAR COOKIES

3/4 Cup Unsalted Butter
1/4 Cup Light Butter
1 Cup SPLENDA? Granular
1 Tbsp. Vanilla Extract
1/4 Cup Egg Substitute
1/4 Cup Water
3/4 tsp. Vinegar (white or cider)
1 1/2 Cups All Purpose Flour
1 1/2 Cups Cake Flour
1/4 tsp. Salt
1 tsp. Baking powder


Preheat oven to 350°. Lightly oil a cookie sheet and set aside.

Blend together butters, SPLEND?? Granular and vanilla in a medium sized mixing bowl. Blend until butter is softened. Add egg substitute, water and vinegar. Mix briefly. Add flours, salt and baking powder. Mix using low speed (or by hand) until dough is formed. Do not over mix.

Remove dough from bowl and place on a floured work surface. Divide dough in half. Pat each half into a circle. Cover with plastic wrap and refrigerate approx. 1 hour, allowing dough to chill.

Remove dough from refrigerator and roll out on a floured work surface to desired thickness (approx. 1/4 inch). Cut with cookie cutters. Place cookies on a lightly oiled cookie sheet.

Bake in a preheated 350?° oven 10-12 minutes or until lightly browned on the back. Cool on a wire rack.

Do you prefer the taste of Coke, or diet coke? Yikes, unless you're diabetic... toss it! You could try to pass it off as the real deal, probably won't work? As a chef, I would cut the fat & calories out of other areas of my diet than dessert! Much more tasteful, huh?

Splenda is used cup for cup as a sugar substitute. So if the recipe calls for 1 cup of sugar you would need a cup of splenda. That would be a lot of packets to open.

SPLENDA SUGAR COOKIES

1 cup unsalted butter, softened
1 cup SPLENDA? Sugar Blend for Baking
2 large eggs
2 teaspoons vanilla extract
4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
OPTIONAL GARNISHES:
decorative candies and colored sugars

Beat butter at medium speed with an electric mixer in a medium mixing bowl until creamy. Gradually add SPLENDA? Sugar Blend for Baking, beating well. Add eggs, one at a time, mixing well after each addition. Stir in vanilla.

Combine flour, baking powder, and salt in a separate mixing bowl. Gradually add flour mixture to SPLENDA? Sugar Blend for Baking mixture, beating until blended. Do not over-mix.

Place dough on a lightly floured work surface. Divide dough in half; pat each half into a circle and wrap with plastic wrap. Chill cookie dough for one hour or until slightly firm.

Preheat oven to 325 degrees F.

Remove dough from refrigerator. Work with one portion of dough at a time. Roll each portion to 1/8-inch thickness on a lightly floured surface. Cut with a cookie cutter, and place on lightly greased cookie sheets. Sprinkle with decorative candies or colored sugars, if desired.

Bake in preheated oven 8 to 10 minutes or until edges of cookies are lightly browned. Cool slightly on cookie sheets; remove to wire racks to cool completely.

Makes 2 1/2 dozen cookies

SPLENDA CHOC CHIP COOKIES!!

Ingredients

2 1/4 cups unbleached flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup Butter Flavor Crisco shortening
1/4 cup Splenda Sugar Blend for Baking
1/2 cup Splenda Brown Sugar Blend for Baking
1 1/2 teaspoon vanilla extract
2 eggs
1 cup Ghirardelli chocolate chips or 1 12 oz. package of semi-sweet or dark chocolate morsels
(you can always add more chocolate chips as desired!)

Directions

Preheat oven to 375 degrees.

Combine flour, baking soda and salt in small bowl. Set aside.

Mix shortening, Splenda Sugar Blend for Baking, Splenda Brown Sugar Blend, and vanilla at medium speed with an electric mixer till blended. Add eggs, one at a time, mixing well after each addition. Gradually add flour mixture, beating until blended. Stir in chocolate chips.

Spoon rounded teaspoonfuls of cookie dough onto ungreased baking sheets and press gently to lightly flatten dough.

Bake 10-11 minutes or until lightly browned. Remove from oven and cool on a wire rack.
Note: If you like chewy cookies, you may want to bake them for less time (just make sure you watch them!) Of course, this all depends on your oven temperature!

This recipe makes 3 dozen medium size cookies - that's about 3 cookie sheets!
