What did i do wrong with the tuscany chicken?!
i premade tuscany chicken for friends that are coming tonight. i was up all night getting sick. this is how i made it... can someone tell me what i did wrong?
breaded the chicken tenders with a light flour salt and pepper and chilli powder. heated alot of extra virgin olive oil in a pan with chillies, rosemary and garlic. browned the chicken. placed chicken and entire contents of pan in a baking dish. added an entire can of black olives (and liquid) entire can of herbed diced tomatoes(and liquid) let stand few hours and baked at 20 min at 400. added salt to taste.
now my belly hurts so bad and i can't give that to my quests. i will have to order pizza.
did i have too much olive oil? did the black olives and oil make my belly turn?

yes it was the black olives and oil. plus that is alot of oil!!! how much did you use.
if you got that sick it sounds like it was the chicken... are you sure it was fresh? Did it have even the slightest smell from it when you were cutting it up? I always buy fresh, free-range chicken to be on the safe side. Such a shame it didn't turn out nice as it sounds lovely.

thats a horrible mix of seasonings and food and theres nothing Tuscany about it...where the heck did you find that recipe??? should have lemon..thyme...rosemary and white wine...no chili powder or chilies
3 lbs chicken breasts or tenders
1 cup white wine
1/4 cup olive oil
2 lemons juiced
sprigs of fresh thyme and rosemary
2 cloves garlic...crushed
salt and pepper to taste
if you want a little heat..add red pepper flakes to your liking....
some people do add tomatoes and sauteed bellpeppers....again...its to your liking
mix everything in a bag with your chicken...chill for a few hours
drain marinade into a pan and reduce till about half the sauce is left....heat 2 tbsp olive oil....brown chicken on both sides till done....deglaze pan with a splash of wine....add to reduced marinade...drizzle over your chicken....serve with pasta or a nice rice pilaf!!!!
The phrase that caught my eye was "let stand few hours and baked...". Did you let it stand at room temperature, or was it in the refrigerator? If it was at room temperature, that's where you went wrong. It was swarming with so much bacteria that baking it for 20 minutes couldn't kill them all.
