I make this in the oven becuase its healthier. Youc an fry it but it looses some its lowfat -ness (yes i know thats not a word)
Crispy Coconut Chicken Fingers Recipe
Ingredients1 1/2 pounds boneless skinless chicken breast halves, cut into 1-inch strips
1 cup sweetened flaked coconut
1 egg, lightly beaten
1/2 cup flour
1/2 tsp. salt
1/3 cup. butter or margarine, melted
1/4 tsp. garlic powder
1/4 tsp. pepper
Apricot Dipping Sauce
Heat oven to 400 degrees. Mix coconut, flour, salt, pepper and garlic powder in medium bowl. Dip chicken strips into egg, then coat with coconut mixture. Place in a shallow baking pan. Drizzle with melted butter. Bake 25 minutes or until chicken is browned and cooked through, turning once. Serve with Apricot Dipping Sauce, if desired. Makes about 2 dozen.
Apricot Dipping Sauce: Mix 1 C. apricot preserves and 2 T. Dijon mustard until well blended.
Gosh putting that all together would make a wonderful sandwich. Use wheat bread and low fat mayo. And maybe a couple slices of tomato too.
Or else cut everything in slices and toss in a salad for something a little more healthy!

Directions:
Fry bacon until crisp. Drain on paper towels.
Peel avocado, taking care not to remove bright green flesh just inside the skin. Cut in half and remove seed. In a bowl, mash avocado, then stir in lemon juice, salt and pepper.
Butter two slices of bread. Spread avocado mixture on buttered sides of 2 bread slices. Scatter bacon over avocado. Cover with remaining bread slices, buttered sides down, and press together.

This sandwich is awesome! I was a little unsure about the avacado part, since I am usually not too fond of them. I decided to try this recipe anyway since my fiance loves avacados. I think I ended up loving it even more than he did! It's such a great recipe. I used jalapeno cheddar bread from Wal-Mart, and pepper jack cheese instead of the monteray jack. This is definitely a recipe I will be making over and over again! Thanks so much!
Chicken and Avocado Panini Sandwiches
1 avocado
1 teaspoon fresh lemon juice
1/4 cup red onions, diced
1/4 cup cilantro, chopped
1/3 cup grape tomatoes, quartered
2 teaspoons jalapenos, chopped (jarred variety)
salt and pepper
2 pieces naan bread (or can use tortillas or any other bread)
4 pieces bacon, cooked crisp
1 cooked chicken breast half, sliced thin (I usually used left over grilled or smoked)
3 ounces monterey jack pepper cheese, sliced (I use half-light by Cabot)
1-2 teaspoon fat-free mayonnaise
1/4 cup fat-free cheddar cheese, grated
Heat panini press to medium. (Or can grill on skillet or George Foreman).
Peel and remove pit of avocado. Coarsely mash avocado in bowl using fork (leave some chunks). Add lemon juice and stir. Stir in onion, cilantro, chopped jalape?os, and tomatoes. Salt and pepper to taste.
Spread thin layer of mayo on bread slices.
Assemble sandwich by layering onto bread sliced jack cheese, chicken, bacon, avocado mixture, and grated cheddar. Top with remaining slice of bread.
Grill until heated through and crispy on the outside. If using Naan bread, slice into six triangles. (If using other bread/tortilla, cut according to size of sandwich).
