Great Salsa recipe?!

Question: I love the salsa at Chili's. I have never been able to find a small-chunk watery salsa like it in the stores. Anyone have a great recipe for similar salsa?

This recipe is supposed to taste a lot like Chili's salsa, but I've never eaten at Chili's so I can't vouch for it.

14 1/2 ounces can tomatoes and green Chills (like Ro-Tel)
14 1/2 ounces can whole peeled tomatoes plus the juice
1 tablespoon jalapenos (canned, diced, not pickled) PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1 teaspoon jalapenos (canned, diced, not pickled)
1/4 cup diced onion
3/4 teaspoon garlic salt, to taste
1/2 teaspoon cumin, or more to taste
1/4 teaspoon sugar, to taste

Place jalapenos and onions in processor; process for just a few seconds. Add both cans of tomatoes, salt, sugar and cumin. Process all ingredients until well blended, but do not puree. Place in covered container and chill. A couple of hours of chilling will help the flavors to develop. Serve with your favorite thin corn tortilla chips.

me and my mom made it like this.

6 large seeded chopped peeled tomatoes

2 cups seeded chopped green peppers

1 cups seeded jalapeno pepper, chopped

3/4 cup chopped onion

1 1/2 teaspoon salt

2 cloves minced garlic

1 1/2 cups cider or wine vinegar

Directions

Combine tomatoes, peppers, onions, salt, garlic, and vinegar in a large pot.

Bring to a boil, reduce heat and simmer 20 minutes.

Pour into hot jars leaving 1/4 teaspoon head space an adjust the caps

Process for 30 minutes in boiling water bath.

Yields: 6 half pints or make fresh and store in refrigerator.

Spicy mango salsa

2 ripe mangos, flesh of
1 clove garlic, peeled
1/4 fresh habanero pepper, Careful with these. VERY hot
3 tablespoons fresh lime juice
1 tablespoon sugar
1 pinch salt

Combine all ingredients in a sauce pan over medium heat and cook for 15-20 minutes stirring occasionally until the mangos begin to break down.
Puree the mixture in a food processor or blender.
Can be served hot or cold.

1 can stewed tomatos
1 can diced tomates
(if daring) 1 can Rotel diced or Rotel Mild
1 sm can chopped green chilis

1 jalapeno, may need adjustment because of heat...more or less

1 half onion
1/8 garlic powder or 2 cloves garlic
1/2 green bell pepper
sugar if desired
1T lemon juice
After pulsing, Salt and pepper to taste

Put liquids in cans in blender, add onion, peppers, in blender and pulse. Put rest ingredients in blender and pulse just to blend or do in series if jar is not lg enough. I like it pretty chunky so I pulse only couple times.

You can change up recipe by adding other ingredients like cumin for smokey flavor, cilantro, chili powder, etc.
