Could I cheat and make Spanish Rice using Rotel?!
Answers: I have no chicken stock or broth, but I do have a can of rotel in the pantry and plenty of brown rice....thoughts?
I had a recipe for cube steaks in a crockpot...you covered it with salsa...i didnt have salsa so i covered it in ro tel...it was to be served over rice....when i bit into the rice with the ro-tel...i immediately thought...this would be a great spanish rice....lol....it's really really good!!!!!!
Never considered using it that way but I'm gonna try it. Sounds good .

Use it to replace some (half) of the water...remember it can be very hot. I use it all the time, or use some salsa like Pace. Also add some garlic, cumin and chili pdr. Some fresh chopped tomato and chopped ripe or green olives are a wonderful addition to add at the end...toss and serve.

4 strips bacon
1 cup long grain white rice
1 (10 ounce) can Rotel Tomatoes, mild or hot
1 onion, chopped fine
1 small green pepper, chopped fine
2 cloves garlic, crushed
1 cup chicken broth
2 cans green chilies
1 tablespoon butter
Fry bacon in skillet until browned.
Remove from skillet, crumble, and set aside.
Do not remove bacon grease from skillet!
Melt butter in skillet and add onion, pepper and garlic.
Saute until onions are translucent.
Add the Rotel, green chiles and chicken broth and simmer approximately 5-10 minutes.
Add the rice, cover and simmer approximately 20 minutes.
Crumble bacon on top and serve.

I make home made mexican food, but when I make rice, I always use rice a roni (spanish). It is sooooo good.
Sure! If you have any chicken boullion cubes, toss those in w/ the additional water. Maybe a little saffron or turmeric if you have it. Before adding raw rice, I'd taste the broth mixture to be sure it tastes pretty salty and seasoned, so your rice will have flavor.
I do all the time!!
I cook the rice, add my rotel, some cooked corn, a little garlic salt, and then top it with cheese. It is really good and really quick!!!
