Rice pilaf....
Dice some red pepper, onion, and shredded carrot. Saute in 1 tbsp butter for 3 minutes. Add 1/3 cup slivered almonds and 1 cup basmati rice. Saute until toasty but not brown. Add 2 cup chicken broth. Lower heat and cover. Cook ~ 15 minutes or until liquid is absorbed.

Green beans almondine
toast slivered almond in 4 tbsp butter. Add cooked fresh green beans or thawed frozen. saute until heated through.

I would have some steamed rice, mabey even some stir fried veggies, and a nice merlot.

i think a wild rice dish, sauteed whole green beans in garlic, squash casserole, and a green salad.

steamed rice and a vegie

a wild rice along with asparagus and the wine I would go with a white chardonney like Blackstone.

Have you ever had couscous? Super quick and easy. Near East is the brand I usually use and it comes in several flavors. Takes about 5 - 7 minutes. (add seasoning to water, boil, add the grains and stir, then put on lid, remove from heat and let sit for 5 minutes. fluff and serve!)
I was introduced to this stuff about 5 yrs ago and I love it. Easy and tasty and goes well with many things as a side dish.

risotto w/ shrimp - asparagus tips - seasoned red potatoes - flan for the finish
