(Make 24 mini, or 12 reg size)

Ingredients:

3/4 cup milk
1 cup unbleached/all-purpose flour
1 cup quick cook oats
2 teaspoons baking powder
1 egg
1/8 teaspoon baking soda
? cup vegetable oil ? teaspoon salt
? cup honey
1 teaspoon cinnamon
1 teaspoon pure vanilla extract
? teaspoon nutmeg
Method:
Preheat oven to 350 degrees F. Line mini muffin pan with paper cups, or lightly grease.
In a small bowl combine milk and oats, let soak for 15 minutes.
In a large bowl, beat egg and oil. Add honey, vanilla extract and blend well. Sift flour, baking powder, baking soda, salt, cinnamon and nutmeg into wet mixture. Stir until just combined. Spoon batter into cups until 2/3 full.
Bake in preheated oven 15 – 20 minutes, until toothpick inserted comes out clean

This recipe doesn't have any sugar added at all, not even honey.

2 cups rolled oats
2 cups cold coffee or milk or juice or cold tea
1 cup applesauce, pumpkin puree, or 2 smooshed bananas
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon baking soda
2 cups flour

Preheat oven to 400°F.
Soak oatmeal in liquid until softened, about 10-15 minutes.
Add fruit and mix.
Stir in salt, soda and baking powder.
Add flour and stir to blend- Don't over stir!
Bake until lightly browned and a toothpick inserted into the center of one of the muffins comes out clean, about 15 minutes.
These freeze well.
