Gluten free meal planning?!
Answers: I could use some help planning gluten free meals for my husband. He has only been gluten free for a week so this is still quite new to us. I am having a hard time making meals for him. I have bought gluten free pasta, and crackers and cereal, and I am grocery shopping this evening so I can pick up any ingredients for whatever recipes you have. I am a good cook, so complicated recipes dont scare me. He loves pasta and tacos and I have good recipes for those..... but rice and bean recipes as well as boxed lunch ideas would be wonderful! I will give a best answer.
Your husband is lucky that you look out for him and are a good cook as well.

For Mexican, I make my children quesadillas (corn tortillas with melted cheese) and give them a side of beans with several toppings on the side including: chopped avocado, diced tomatoes, shredded lettuce and sour cream.
Hmm, boxed lunches might be PBJ on a rice cake or gluten-free bread. Or, you could purchase some lunch meat (I like the organic turkey from Applegate Farms) and make a turkey sandwich. Add a piece of fruit and these gluten-free cookies:

You should also Google "gluten free" and "gluten free recipes". There are so many great sites out there and, in very little time, you'll know exactly what items you can (and cannot) buy and you'll get yourself a lovely repertoire of recipes that you & you husband will love. I was diagnosed with food allergies about a dozen years ago and there was so little info out there and so few food products commercially available & now there are cookbooks & natural grocery stores w/wheat free & gluten free products.
So, even though you may be overwhelmed now, it'll all become second nature pretty soon. You can also find websites with restaurant menu help so you know what items in restaurants are gluten free.
Good luck to you & your husband... It's tough at first, but it's well worth doing the research. He'll feel so much better in a few weeks!! ;-)
