Answers: I burn the outside a lot and the middle doesn't cook so well.

Begin with medium high heat and then reduce.
With your cooker you may have to raise the temperature or lower it.
With experience you will know what to look for.
Don't poke it, move it or press down on it and they should be good.-

Dont cook it on such a high heat. Cooking it at a lower temp will give the inside a chance to cook through without burning the outside!

Do you stir it? make sure the flame is low on the stove. The flame is too high if are burning hamburger.

make sure the pan or grill you use is evenly heated and that your ground beef is bound together throughtout the patty with eater egg or bread before starting to cook. turn the burger every so often to ensure even heat distribution and you should be fine. it's worked for me for years.

Here is Alton Browns "Burger of the Gods" Recipe

8 ounces chuck, trimmed, cut into 1 1/2-inch cubes
8 ounces sirloin, trimmed, cut into 1 1/2-inch cubes
1/2 teaspoon kosher salt

In separate batches, pulse the chuck and the sirloin in a food processor 10 times. Combine the chuck, sirloin, and kosher salt in a large bowl. Form the meat into 5-ounce patties.
Heat a cast iron skillet or griddle over medium-high heat for 2 to 3 minutes. Place the hamburger patties in the pan. For medium-rare burgers, cook the patties for 4 minutes on each side. For medium burgers, cook the patties for 5 minutes on each side. Flip the burgers only once during cooking.

Pull veggie burger out of freezer.

Place in microwave.

Put on appropriate time setting.

Cook.

Veggie burger will be steaming when it's done! =)

Cover it with a pot lid. Things cook through faster when covered. It also makes for a juicier burger.

Upon seeing your question, I was going to answer "Don't burn it!", and then I see that's what you do.

Burning proteins is not a good idea, it generates a variety of carcinogenic compounds.

Coca-cola

All these answers sound good, I would never add a binder to a burger and I usually cook on medium to medium/high. Also resist pressing down on the burger cause it becomes very dry if you do.

the best way is on a BBQ a charcoal BBQ not them gas ones failing that a griddle and yes you do need high heat and yes it needs to be an even heat so you get your burger put it on the Barby after two Min's turn it over and cook for a further two Min's this should now be moved to a cooler part of the Barby to Finnish cooking remember you do still need to turn it over until you have yourself a perfectly cooked char grilled burger that you simply could not get from cooking over low or medium heat try it out for yourself i mean why take my word for it after all i am only a chef with over thirty years experience in cooking food professionally
