Is it ok to reuse oil after cooking to make something else?!


Question: When I was growing up, we always reused oil when deep-frying. If we cooked fish in it, we would just fry hush puppies in it afterwards because the fish taste flavored the hush puppies. But in today's heal environment, and the fact that we now know about trans-fats, it's not a good idea. When you heat oil - even the best of oils - the heat changes it. And the more it's heated, the more trans-fats there are in the oil. So, even if you've only cooked doughnuts in it or mild foods, you are increasing the trans-fats every time it's reheated. Trans-fats are the nasty fats that do the most damage to the body. So, flavor-wise, yes you can reuse that oil if you haven't fried strong things with it but health-wise - not a good idea. Even if you start with peanut oil or olive oil, doesn't matter.

Depends on what was cooked in it. Nothing with a strong flavor.

I am a cook and I'd recommend using it only for sauteeing something, not refrying. If you've fried meat or garlic-rich or strongly-spiced stuff in it, it leaves the mark in the new food. Also, some spcks of food remain in the oil which can become black spots and stick to the pan. They can make the newly fried food become dark in color, so not recommended

but if you are using 2-3 tbsp for light saute, it's fine!

absolutely. just as the ^ previous person said, as long as there are no strong residues left, it's fine. It may need to be filtered if it has any residue such as breading etc

I reuse fry-oil many times over, so long as it is the same thing being fried the 2nd, 3rd, 4th times, etc.

I have fried fish with the same oil about 5 or 6 times.

I used 5 gallons of oil to deep-fry 3 turkeys last Nov. and Dec., and I could have done a couple more. They all came out great!

My friend, who sells deep fried turkeys for the holidays, says the oil is 'good' for about 5 turkeys.

I don't see anything wrong with it. unless you just used it on fish. ugh!

it depends on what you are cooking. with chicken or fish i would not.

Yeah its cool to do it,But just dont fry chicken in grease youve fried fish in.You should keep fish grease seperate since it has a much stronger odor.
