Shortbread:

INGREDIENTS

* 2 cups real butter, softened (no substitutes)
* 1 cup white sugar
* 2 teaspoons vanilla extract
* 4 cups all-purpose flour

DIRECTIONS

1. Preheat oven to 350 degrees F (180 degrees C).
2. Cream butter and sugar until fluffy. Stir in vanilla; add flour and mix well.
3. Put through cookie press and form cookies onto baking sheets. (Or you can just roll them in balls and slightly flatten them, but handle quickly or the butter will get too warm and they'll spread). Bake for 10 minutes. Cool one minute and transfer to wire rack.

Baked fruit with honey, very tasty and natually sweet. Add a little vanilla yogurt or ice cream to make it look extra pretty.

Make a dump cake! They're easy if you have the ingredients:
crushed pineapple, cherry pie filling, butter, and any white or yellow box cake mix. There are dozens of recipes and variations for this on the web if you Google it. They're easy, fast, and delicious! :)

=) Make a substitution here and there (wheat flour for white, add only half the salt, 15 oz can of pumpkin instead of a whole sugar pumpkin and use an alternative for vegetable oil (applesauce or melted margerine)) and that stuff is YUMMY!

I did leave out the cloves in mine, however, since I've found I'm not fond of them.

Snickerdoodles
about 36 cookies
Prep: 25 minutes
Chill: 1 hour
Bake: 10 to 11 minutes per batch

Ingredients
1/2 cup butter, softened
1 cup granulated sugar
1/4 teaspoon baking soda
1/4 teaspoon cream of tartar
1 egg
1/2 teaspoon vanilla
1 1/2 cups all-purpose flour
2 tablespoons sugar
1 teaspoon ground cinnamon

Directions
1. In a medium mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add the 1 cup sugar, baking soda, and cream of tartar. Beat until combined, scraping sides of bowl occasionally. Beat in egg and vanilla. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour. Cover and chill in the refrigerator for 1 hour.

2. In a small mixing bowl combine the 2 tablespoons sugar and the cinnamon. Shape dough into 1-inch balls. Roll balls in the sugar-cinnamon mixture to coat. Place 2 inches apart on an ungreased cookie sheet.

3. Bake in a 375 degree F oven for 10 to 11 minutes or until edges are golden brown. Transfer cookies to a wire rack; cool. Makes about 36 cookies.

Yellow Cake

Cool: 1 hour
Stand: 1 hour

Ingredients
2-1/2 cups all-purpose flour
2-1/2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup butter or margarine
1-3/4 cups sugar
1-1/2 teaspoons vanilla
2 eggs
1-1/4 cups milk

Directions
1. Grease and lightly flour two 8x1-1/2-inch or 9x1-1/2-inch round baking pans or grease one 13x9x2-inch baking pan; set pan(s) aside. Combine flour, baking powder, and salt; set aside.

2. In a large mixing bowl beat butter or margarine with an electric mixer on medium to high speed for 30 seconds. Add sugar and vanilla; beat until well combined. Add eggs, one at a time, beating 1 minute after each. Add dry mixture and milk alternately to beaten mixture, beating on low speed after each addition just till combined. Pour batter into the prepared pan(s).

3. Bake in a 375 degree F oven for 30 to 35 minutes or until a wooden toothpick comes out clean. Cool layer cakes in pans on wire racks for 10 minutes. Remove layer cakes from pans. Cool thoroughly on racks. Or, place 13x9-inch cake in pan on a wire rack; cool thoroughly. Frost with desired frosting. Makes 12 servings.

Yellow Cupcakes: To make cupcakes, grease and lightly flour thirty 2-1/2-inch muffin cups or line with paper baking cups. Prepare cake as directed in Step 2. Fill each cup half full. Bake in preheated oven for 18 to 20 minutes or until a wooden toothpick inserted in center of a cupcake comes out clean. Cool on a wire rack. Makes 30 cupcakes.

DESSERT

Twinkie-misu





Ingredients
?? cup water
?? cup sugar
3/4 cup brewed espresso
?? cup Italian brandy
1 ?? cup heavy cream
?? cup sugar
1 tbsp. vanilla extract
1 lb. mascarpone cheese
12 Twinkies, sliced ??-inch thick (crosswise)
Cocoa powder for light dusting

Directions
Combine water and sugar in small saucepan.
Bring to a simmer, stirring occasionally to dissolve sugar.
Remove from heat, cool and add coffee and brandy.
Whip cream, sugar and vanilla until soft peaks form.
Fold cream into softened mascarpone until blended.
Place a layer of the Twinkie slices in the bottom of a shallow 2-quart baking dish.
Drizzle with half the espresso syrup.
Spread with half the mascarpone filling.
Repeat with remaining twinkies, syrup and mascarpone filling.
Cover with plastic wrap and refrigerate.

Cupcakes, our favorite!

Baked pears.
Preheat oven to 350

Get as many pears for people you are serving(we will use two for example) . Peel and core the pears. Place in deep glass or ceramic baking dish standing upright.

Place one teaspoon of butter (or butter substitute) on top of each of the pears. Sprinkle with cinnamon.

Bake for 10-15 minutes or until pears are soft to the touch but warm.

Cut in half and serve with vanilla ice cream (i use fat free ice cream)
