How many different ways can you make chicken?!


Question: I make fried, both kinds, floured and breaded, chicken parmesan, chicken taquitos and tacos , chicken spaghetti, Italian chicken, teriyaki chicken, chicken stir fry, bbq chicken, breaded chicken sandwiches, carving board chicken sandwiches, chicken nuggets and strips , chicken soup, chicken casserole, baked chicken and foil packets…..

and I’m sick of them all….don’t get me wrong I do eat beef, pork and fish, but chicken is always cheaper at the store.

What do you do with chicken and do you have any recipes that you might think that I might like?

I want a good old fashioned recipe for chicken gumbo, old style. Grandma use to make it, but she passed on with her recipe.

I’m up for anything, list what you know and pass around some recipes if you don’t mind.

Citrus Chicken & Rice

4 skinless, boneless chicken breasts
1 3/4 cups Chicken Broth
1/2 cup orange juice
1 medium onion, chopped
1 cup uncooked regular long-grain white rice
1 tbsp. dried parsley flakes
Orange slices

COOK chicken in nonstick skillet over medium-high heat 10 min. or until browned. Set chicken aside. ADD broth, orange juice, onion and rice. Heat to a boil. Cover and cook over low heat 10 min. Return chicken to skillet. Replace cover. COOK 10 min. or until chicken is done. Stir in parsley and top with orange slices.

Mexican Chicken Casserole

5-6 skinless,boneless chicken breast
15 oz black beans, drained
2 cans corn, drained
1 c chunky salsa
1 c cheddar cheese

In crockpot, place chicken. In large bowl, combine beans, corn & salsa. Mix well. Pour over chicken. Cover & cook on high 3 hrs. Sprinkle cheese over mixture. Cover & cook 10 min.

Salsa Chicken

4 skinless, boneless chicken breast halves
4 tsp taco seasoning mix
1 cup salsa
1 c shredded Cheddar cheese Kraft 2% low fat
Light sour cream for garnish

Preheat oven to 375 . Place chicken breasts in 9 x 13-inch baking dish. Sprinkle taco seasoning on both sides of chicken. Pour the salsa all over the breasts. Bake about 25 - 30 minutes or until chicken is tender and juicy and juices run clear. Sprinkle the cheese on the breasts evenly and bake another 5 minutes or so until melted and bubbly. Serve with fat free sour cream as a garnish if desired.

Fiesta Chicken & Rice Bake

1 can (10 3/4 oz.) Cream of Chicken Soup
1 cup Picante Sauce
1/2 cup water
1 cup whole kernel corn
3/4 cup uncooked regular long-grain white rice
4 skinless, boneless chicken breasts
Paprika
1/2 cup shredded Cheddar cheese

MIX soup, salsa, water, corn and rice in 2-qt. shallow baking dish. Top with chicken and sprinkle with paprika. Cover. BAKE at 375°F. for 45 min. or until done. Sprinkle with cheese.

Verde Enchilada Casserole

1 can (10 3/4 oz.) Creamy Chicken Verde Soup
1/2 cup water
1/2 tsp. garlic powder
2 cups cubed cooked chicken
4 flour tortillas (8-inch), cut into strips
1/2 cup shredded Cheddar cheese

MIX soup, water, garlic powder and chicken. Stir in tortillas. SPREAD in 2-qt. shallow baking dish. Top with cheese. Cover. BAKE at 350oF. 25 min. or until hot.

try searching on food network. They have some good ideas and reading through there, you may come up with your own mix and match combination.

Chicken and Bacon Parcels with New Potatoes

Per person, for this recipe, you will require:

1 chicken breast fillet
2 large rashers of unsmoked bacon
1 small tomato (sliced)
2tsp coriander, cilantro in US (roughly chopped)
1 clove of garlic (finely chopped)
Freshly ground black pepper
Olive oil
4 or 5 small new potatoes (unpeeled)
Small knob of butter
Pinch of dried dillweed

Place a couple of slices of tomato on the underside of the chicken breast, cover with coriander and garlic and wrap the bacon around it. Place the parcel in the dish and cover with any remaining coriander. Add some pepper and olive oil. Put the lid on the dish and cook in a preheated oven at 200 degrees Celsius for 20/25 minutes. Check that the chicken is cooked all the way through by inserting a metal skewer or fork and ensuring the juices run clear.

NB: no additional salt is required in this dish as the bacon provides all that is necessary.

Boil the new potatoes in salted water for about 25 minutes, drain well then add the knob of butter and the dill and swirl them gently around the pot to ensure thay are fully coated.

I make the following out of "chicken" here are my own versions...


chicken sandwhiches..
best on sour dough bread..
rotisserie chicken bought and shredded
in a food processor combine walnuts, dried cranberries and sweet relish..
then mix all that from the food processor in a large bowl with some mayo..add black pepper if you like..
and add the shredded chicken..and put on nicely toasted sour dough bread..
Ready to eat...

chicken alfredo (half a chicken cooked at home or rotisserie chicken at the store can be used for this)..
cook pasta
then once pasta is cooked mix pasta with half or whole jar of Alfredo sauce..from the store depends on how thick of an Alfredo sauce you like. I use half a jar..one time and then half a jar the next time..
then shred the rotisserie chicken into manageable pieces and combine with the pasta Alfredo.
Ready to eat.

chicken salad (rotisserie chicken or chicken out of the can)...
take the chicken, shred it and put it in a large bowl
then in a food processor combine walnuts, dried cranberries, and a bit of sweet relish, once done..
pour that on top of the shredded chicken in the large bowl.
mix with mayo and add black pepper if you like
and ready to eat..can be eaten on bread or crackers or with tortilla chips..


chicken pot pie
store bought rotisserie chicken and store bought pie crust..
blind bake pie crust for a few minutes 5 min-10 min depends on temp of oven..as all are different..
use store bought mixed frozen vegies
use 1-2 cans of chicken stock, and a can of cream of mushroom soup..(maybe add some corn starch)...to thicken liquids up a bit..
add shreded rotisserie chicken the mixed vegies...
combine all until its rather thick and pour in once baked pie crust..
then bake again..
then ready to eat..

Chicken Piccata is our home's all time favorite and is soooo easy to make. Mmmm, I can taste the lemon and capers now.
