Have no idea what to do for my school's hertigage feast?!?! PLEASE HELP!?!


Question: We have to write a receipe and bring in a dish for my school's hertigage feast thingy. I'm scottish, italian, and irish. Does anyone have a good link for a good dish of one of those hertigages? It can't be soups or beverages.

Make an Italian Pesto Torte. Mix softened cream cheese with Parmesan cheese and black pepper. Pat into a bowl shape in a plastic wrapped lined bowl. Reserve one third to top off the torte. Fill with store bought basil pesto, cap the torte with the remaining cream cheese mixture and cover with plastic wrap. Chill overnight. Unmold onto a plate and top with purchased sun dried tomato pesto. Serve with crackers or you can cut up French bread and brush it with garlic flavored olive oil and make little toasts called crostini.

Speghetti with a side of irish potatoes.

Saint Clement's Cake
1/2 cup self-rising flour
4 tablespoons butter or margarine
4 eggs
1/2 cup granulated sugar
2 tablespoons Lemon Curd
Lemon Curd
1/2 pound butter or margarine
1/2 pound granulated sugar
4 eggs, slightly beaten
Juice of 2 or 3 lemons
Icing
1 1/4 cups confectioners sugar
Juice of 1/2 lemon
Slices of orange and lemon
Crystallized candies
--Sift flour into a bowl. Melt butter in a small pan. Set aside to cool. Whisk eggs and sugar until very pale and creamy. Fold in flour and melted butter. Pour into an 8-inch greased cake pan. Bake at 350 degrees for 30 minutes.Turn out on a rack to cool.
Lemon Curd: Melt sugar and butter in a double boiler. When warm, stir in eggs and lemon juice. Continue to stir until mixture thickens. Remove from heat and store in a dry jar in the refrigerator.Cut cooled cake into three layers. Sandwich with Lemon Curd.
Icing: Sift confectioners sugar. Mix with lemon juice and a little water to make icing stiff enough to coat back of spoon.
Pour Icing over cake so that top and sides are coated (do not spread). Leave to set. Decorate top of cake with strips of orange and lemon candy slices.

Italian Cannolis
1 cup fresh ricotta cheese
1/4 cup mascarpone cheese
1/2 cup apricot preserves
3 ounce bittersweet, or semi-sweet chocolate, fine chop
6 purchased cannoli shells
Ground coffee
Powdered sugar
--In a food processor, combine ricotta, mascarpone and process until blended. Add apricot preserves and process until blended, leaving some "chunks". Add chocolate, using "ON/OFF" turns. (DO NOT PUREE.) With a pastry bag, pipe the filling into the shell. Sprinkle the open ends with coffee and refrigerate up to 6 hours. Sprinkle with powdered sugar.

Amaretti (Almond Macaroons)
1/2 pound blanched almonds
4 drops bitter almond oil
3/4 cup granulated sugar
2 egg whites
1 tablespoon confectioners sugar
--Heat oven to 250 degrees F. Finely grind blanched almonds, in batches, using a hand grinder, blender or food processor combine almonds with almond oil, sugar and lightly beaten egg whites. Knead mixture into a firm dough. With moistened hands, form dough into 1-inch diameter balls (about 45 balls). Place balls at least 1 inch apart on a baking sheet covered with baking parchment, using a second baking sheet if needed. Place baking sheet on bottom rack of oven and bake for about 55 to 60 minutes. Transfer baked cookies to a wire rack. Using a fine sieve, dust cookies with confectioners sugar while warm.
