Any short grain rice should work, although the taste will be different depending on what you use. Medium grain rice might also work, but your rice ball will be a little more fragile.

Tips on making onigiri:
- Never use instant rice. It just won't stick together right.
- Wash your rice well before cooking it to wash off excess starch.
- Let your rice sit covered for ten minutes after it's cooked to steam.
- Wet your hands or onigiri mold well before making onigiri.

Good luck!

Nope, not enough starch to hold together like Japanese rice.

no because American rice does not have the stickiness that is necessary

As long it's short grain. It will work, there is an American brand "Rice Select" that sells their rice in like a box-like clear container. It's Sushi rice..it says on the container too. But I used to cook with it all the time. It works fine. I bought it a Kroger. I don't know if you have a Kroger where you are from though. Good Luck!!
