Mexican Chicken Casserole
5-6 skinless,boneless chicken breast
15 oz black beans, drained
2 cans corn, drained
1 c chunky salsa
1 c cheddar cheese
In crockpot, place chicken. In large bowl, combine beans, corn & salsa. Mix well. Pour over chicken. Cover & cook on high 3 hrs. Sprinkle cheese over mixture. Cover & cook 10 min.

Crock Pot Cheesy Chicken
2 lbs boneless skinless chicken breasts
2 cans cream of chicken soup
1 can cheddar cheese soup
1/4 teaspoon garlic powder
salt and pepper (optional)
Place chicken breasts in the crock pot.
Mix the undiluted soups together with the garlic powder and pour over chicken.
Cover and cook on low 6-8 hours , until chicken is tender. Serve with the delicious sauce over rice or noodles.

Chicken and Noodles
3-4 lbs chicken pieces
4 cups chicken broth or water
1/2 cup butter
1 (10 3/4 oz) can cream of chicken soup
1 (10 oz) pkg extra wide egg noodles
salt
Put all ingredients, except noodles, in crock pot. Cook on low 8-10 hours or on high 3 1/2-4 1/2 hours. (I cook just until the chicken is done, about 5 hours on low). Remove chicken from broth. I like to run a slotted spoon through the broth to make sure no little bones have escaped. Add salt to taste. Turn cooker to high and add noodles when broth is hot and bubbly. Cook 30-45 minutes, or until noodles are done, stirring occasionally. Meanwhile, remove meat from bones. Add bite-size pieces to broth and noodles.

5 Boneless Skinless chicken breast Halves
8 oz sliced mushrooms
1 jar baby corn drained
1 small yellow onion, or white, your choice
2 10.75oz cans of campbells condensed creamy chicken verde soup
Cracked black pepper and salt to taste
First cut up onion, add mushroom, baby corn. Place chicken on top, then spoon soup over chicken. Cover and cook on low for 4 to 6 hrs. Serve with rice, or noodles. I did mine over chunky mashed taters with creamed spinach and cooked it to 5 and a half and the chicken fell apart. Just like moms chicken over rice but MUCH more tender.
I haven't tried this yet but my mom-in-law did it last week and she said it was great. I am trying it tomorrow night.
10 chicken thighs-skins removed (approx 2 3/4 pd)
1 jar 16oz thick and chunky salsa
1 medium onion chopped
2 tbsp curry powder
1 cup sour cream.
Place chicken in slow cooker, combine salsa, onions and curry. Cover with lid.
Cook on low for 8-10 hours. Or on high for about 5 hours)
Remove chicken to serving platter, Cover to keep warm. Add sour cream to "salsa sauce". Stir until well blended. Serve over the chicken.

1 package reduced sodium taco seasoning
1 can reduced fat cream of mushroom soup
1/2 cup reduced fat sour cream
Add chicken to slow cooker.
Sprinkle taco seasoning over chicken.
Pour salsa and soup over chicken.
Cook on low for 6 to 8 hours.
Remove from heat and stir in sour cream.
Serve with rice.
Number of Servings: 6
to give it a creamier taste, i add shredded cheese and sour cream! yum! when it is cooking all day, it makes the house smell SOOOOO good!
Crock Pot -Saucy Italian Chicken Thighs
3 lbs skinless chicken thighs (or breasts will work too)
1 (14 ounce) can Italian-style diced tomatoes, undrained. (I look for the one with the lowest sodium)
1 (6 ounce) can tomato paste (same here on the low sodium)
1 medium chopped white onion
1 tablespoon bottled minced garlic (I used 4 cloves through a press)
1 teaspoon dried Italian seasoning
1/4 teaspoon salt
14 teaspoons pepper
Place chicken in 4 quart crock pot.
Combine tomatoes and next 6 ingredients.
Stir well.
Pour sauce over chicken.
Cover and cook on low for high for 1 hour then reduce heat to low and continue to cook for 4-5 hours or until chicken is tender.
Serve with bread, pasta, or a green salad.
INGREDIENTS:
3 pounds chicken pieces
1 can (10 1/2 oz.) condensed cream of chicken soup
1 can (10 1/2 oz.) condensed cream of mushroom soup
1 can (4 ounces) mushroom pieces, drained
1 bell pepper, sliced
1 onion, sliced
Dash salt, pepper & garlic powder
1/2 c. white wine
PREPARATION:
Wash and dry chicken pieces. Place in crockpot. Combine remaining ingredients and pour over chicken. Cook on low for 6-7 hours or on high for 3-4 hours.
Serve with noodles or rice.
