Peanut Butter Ice Cream Pie

For the peanut butter lovers in our family!

INGREDIENTS
9 graham crackers, crushed
3/4 cup salted peanuts, finely chopped
1/4 cup white sugar
1/4 cup butter, melted
1 quart vanilla ice cream, softened
1/2 cup crunchy peanut butter
1/4 cup chopped salted peanuts


DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
In a small bowl, mix together crushed graham crackers, 3/4 cup finely chopped peanuts, and sugar. Stir in melted butter or margarine. Press mixture into a 9 inch pie plate.
Bake crust in preheated oven for 8 minutes. Chill.
In a medium mixing bowl, mix ice cream and peanut butter together on medium-low speed until combined. Pour mixture into chilled crust. Sprinkle with 1/4 cup chopped peanuts. Freeze for at least 6 hours. Remove from freezer 10 minutes before serving

BORDONS CONDENSED MILK,
3 FRESH SQUEEZED SMALL LEMONS, 3 EGG YOLKS SEPERATED FROM WHITES TO PERFECTION (IF ANY WHITES ARE IN THE YOLKS ITS RUINED).
WHIPP THE WHITES TILL THEY ARE STIFF WITH 9 TBLS OF SUGAR IF YOU WANT MERANGE.
POUR IN GRAHM OR SUGAR COOKIE PIE SHELL AND BAKE TILL MERANGUE LIGHTLY BROWNS. THEN PUT IN ICE BOX AFTER IT COOLS COMPLETELY. AFTER ITS BEEN CHILLED FOR 8 HOURS ENJOY!
Thats a north Louisiana secret receipe from way back.

I prefer pumpkin pie with whip cream on top or razzleberry pie with vanilla ice cream on the side. YUM!

2. Cooking Directions
Preheat oven to 400 degrees F (200 degrees C.) Arrange apple slices in unbaked pie shell. Mix 1/2 cup sugar and cinnamon; sprinkle over apples.
Mix 1/3 cup sugar with flour; cut in butter until crumbly. Spoon mixture over apples.
Bake in preheated oven for 35 to 40 minutes, or until apples are soft and top is lightly browned.
Yield: 8 servings

Double Berry Icebox Pie Recipe

I'm sure a lot of moms out there have made strawberry pies like this, but with strawberry Jello-O. My version uses heaps of fresh strawberries, but the base for the filling is fresh raspberries. The pie will look so delicious you'll want to eat it right away, but avoid the temptation to cut it too soon--allow a full 2 hours for it to chill and set. If you wish, top each serving with a dollop of Whipped Cream.


-One store bought graham cracker crust. The crusts come in Reduced-fat, Chocolate, Cookie, etc. Or, you can use a homemade crust in a 9-inch pan.
-1 envelope unflavored gelatin
-1/4 cup cold water
-2 cups fresh or frozen (20-oz bag) raspberries, thawed (here's where you could use the kiwi fruit, instead)
-1/3 cup sugar
-1TBSP fresh lemon juice
-2 pints fresh large strawberries.

1. Wash and dry strawberries. Cut of ends of the strawberries to arrange right side up on the bottom of crust.
2. In a small bowl, sprinkle the gelatin over the cold water. Set aside. In a food processor or blender, puree the raspberries. You may have to add 1/4 cup of water. You should have 1 1/2 cups puree. In a small saucepan, bring the puree, sugar and lemon juice to a boil over medium heat, stirring constantly. Remove from the heat and add the gelatin mixture. Stir until the gelatin is completely dissolved, about 1 minute.
3. Place the raspberry sauce in a medium bowl set in a large bowl of ice water. Let it stand stirring often, until chilled and syrupy, but not set, 10 to 20 minutes.
4. Ladle the raspberry sauce over the strawberries. Refrigerate until set, at least 2 hours or overnight. Serve chilled with reduced-fat whipped cream.
