Easy Candy Yams

INGREDIENTS
4 cups chopped sweet potato
1 (12 ounce) jar caramel topping
1/8 cup brown sugar
1/2 cup butter
1 cup miniature marshmallows

DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C).
Place sweet potatoes in an 8x8 inch square baking dish. Pour caramel over potatoes. Sprinkle with sugar and dot with butter.
Bake in preheated oven 30 minutes, until potatoes are tender and mixture is bubbly. Remove from oven and sprinkle marshmallows evenly over potatoes. Return to oven until marshmallows are melted and browned, 5 to 10 minutes more.

Add walnut brown sugar and Cinnamon or all spice with butter and colored marsh mellows on top in a baking dish. Bake it until it is warm and the marsh mellows melt.

1 can yams, drained and mashed
1/2 cup margarine, melted
2 teaspoons cinnamon
2 teaspoons ginger
2 teaspoons nutmeg
1/4 cup brown sugar
1/2 cup honey
1 can pineapple bits
1 cup pecans
miniature marshmallows


Put mashed yams in casserole. Mix together margarine, cinnamon, ginger, nutmeg, brown sugar and honey.
Mix in yams with pineapple bits and pecans.
Top with miniature marshmallows.
Bake at 325 degrees until heated through and marshmallows are bubbly.
Note: You may want to cut back on the ginger, I only used 1 teaspoon.

1 lg can cut yams, drain off l/2 of the juice. Put in large casserole dish. Sprinkle on 3/4 cup dark brown sugar, 1/3 lb margarine cut up in small pieces. Bake uncovered in 350 oven for several hours, stirring occasionally.

Old Fashioned Candied Yams

8 servings 2 hours 30 min prep


8 medium sweet potatoes, baked,peeled and sliced in half lengthwise
2 1/2 cups water
1 1/3 cups packed dark brown sugar
4 tablespoons butter
1 1/2 teaspoons cinnamon
1 1/2 teaspoons vanilla


Combine all ingredients except sweet potatoes in 2 quart saucepan.
Bring to a boil stirring occasionally.
Reduce heat and simmer about 45 minutes, stirring occasionally.
Place sliced sweet potatoes in an ungreased 9x13 dish in a single layer cut side up.
Pour syrup over potatoes coating all pieces.
Bake at 400 degrees until bubbly about 45 minutes basting every 15 minutes.

My mom's yams we're the best and so simple to do. She would peel 2 or 3 large yams cut them into 2 to 3 inch pieces put them in a baking dish dot with 1 cup (1 stick) of butter then sprinkle with 3/4 cup of dark brown sugar. Place in 350 or 400 degrees oven uncovered and bake until done or soft to the touch. For an extra treat she would add some chopped pecans. I live in Texas and this is what old fashion candied yams were to me. Mom's passed on now but she was the greatest cook ever, Thanks for asking for mom's recipe.
