for a good vegetarian veg soup recipe start with tomato sauce, add peas, carrots, green onions and either pre cooked rice, or accini or other small bead pasta, just a small amount, it grows as it cooks, add a bit of salt and tabasco or white pepper and simmer for about 15-20 minutes..
for non vegan, you can start with Lipton onion soup mix as a base.
takes just a few minutes, tastes good, serves at least four and you will get compliments.
When I am serving canned veggies or have cooked them and am putting them into serving bowls, I put the liquid in freezer containers. This is what I use for my stock in my veggie soups and stews or meat stews either for that matter.
I put in about 1/4 to 1/2 cup rolled barley to about 4 cups stock. Season with salt, pepper, oregano, comino, cilantro, then put in whatever veggies I want to eat today. Finely diced celery, onion, and garlic. Then green beans or broccoli and cauliflower. Taste after it comes to simmering boil.
I really don't ever measure anything. I just dump in whatever it is I want at the moment.
