Easy snacks for a tea party?!


Question: I want to make some cheap, easy and quick snacks for a tea party. I'm not a good cook and I'm not well funded, so can people think of anything good for a tea party? I have some vegetarians coming.

I have a bottle of pesto. Can I do something with that?

cucumber sandwiches with herbed cream cheese
tomato sandwiches with pesto
dijion, apricot jam and ham slices on raisin bread sandwiches
mini eclairs
cream puffs
shortbread cookies
fruit
jam tarts

chex mix

make a veggie tray and have little finger sandwiches and cookies.....maybe make some soup......or pasta salad, not expensive at all
an easy pasta salad is: get the large shells, cook them, add mayonaise and pimentos.....cheap and good

make beets

since some vegetarians don't eat dairy... fruit cups would be nice.

get some good quality fruit cocktail (or if you have time buy fresh fruits... chop em up) drain the juice. chill the fruits for more than 4 hours, put them in cute tea cups or small bowls. chilled fruit goes great with tea!

or... a tossed green salad with a raspberry wine vinigarette (toss mixed greens, slice cherry tomatoes in half, add bean sprouts and almonds for that wonderful oomph! the dressing is just olive oil, garlic, and raspberry wine vinegar).. season with salt and pepper

for something heavier, i think a pesto pasta would be dainty but filling (sauce: basil, olive oil and pine nuts.. blend in blender... done... pour on angel hair pasta.. YUM! sautee in a little garlic... add salt and pepper to taste)

as for the pesto just add some spaghetti and some salt and cracked black pepper. tastes fab!

cup cakes is a great idea? and have fun decorating the tops of the cup cakes yourself.
heres a simple sponge recipe and once mixed all together just scoop a teaspoon full into averaged sized paper cases.

i don't know if your british but i am so im measuring in oz
8 oz flour (i use self rising)
8oz sugar
8oz margarine
4 eggs and a teaspoon of baking powder
add 3 tablespoons of cocoa powder for chocolate cupcakes?
if your having white sponge add some vanilla
and buy decoration like icing sugar all you need to do is add water to it (only a small amout at a time) or for butter icing ad margarine (it's supposed to be quite thick).

hope ive helped? i know you didnt want anything difficult but you just mix all the cake mixture together until the lumps go and put in the ove gas mark 5 for 20 mins.

tet if its ready by pressing the top and if it springs back it ready but if it stays pressed down put it back in the oven an keep testin every 5 min. oh and last thing don't keepopening the oven until after 20 min because the cakes will sink. and if you don't want to make cupcakes share the mixture into 2 grease and lightly floured cake tins.
