Baked Ziti
1/2 lb ziti pasta
16 ounces ricotta cheese
3 cups mozzarella cheese, grated
3 cups spaghetti sauce
1/2 cup parmesan cheese, grated
Preheat oven to 350.
Boil ziti, following package directions, drain and place in a large bowl.
Mix all the ricotta cheese and half of the mozzarella with the ziti.
Spray a 13x9 pan with Pam.
Cover the bottom half of the pan with about half the sauce.
Put the ziti mixture on top of sauce.
Pour remaining sauce on top of ziti.
Sprinkle with the parmesan cheese.
Top with the remaining mozzarella cheese.
Bake for 20-30 minutes until cheese is melted and it is lightly golden.
i love most kinds of pasta dishes.... i boil noodles... add to a cake pan or something that can be used in the oven. add you favorite sauce saving some for later... sprinkle with Parmesan cheese and i add slices of already cooked smoke sausage..... stir this.. then sprinkle with mozz. cheese... bake till cheese is melted.... then add the left over sauce and serve.. you can also serve with garlic bread and a nice salad. good luck!
oh i also ( if i have it ) add mushrooms and sauteed spinach!
Baked Ziti with Tomato, Mozzarella, and Sausage
olive oil
1 large onion, cut into small dice
6 garlic cloves, minced
1 1/2 lbs hot Italian sausage, removed from its casing and crumbled
salt & freshly ground black pepper
1/4 cup dry red wine
1 (35 ounce) can plum tomatoes, chopped, with their juice
4 medium tomatoes, diced
1/4 cup chopped fresh marjoram or oregano (from about 6 large sprigs)
1 cup fresh ricotta cheese
1 cup freshly grated mild pecorino cheese
1 pinch nutmeg, preferably freshly grated
1/3 cup chopped fresh flat leaf parsley
1 lb ziti pasta
1/2- lb mozzarella cheese, preferably fresh, cut into small cubes
--Heat oven to 425°F. Lightly oil a large, shallow baking dish. Bring a large pot of salted water to a boil. In a large skillet, heat about 2 Tbs. olive oil over medium heat. Add the onion and sauté until soft, about 5 minutes. Add the garlic and crumbled sausage and sauté until the sausage begins to brown. Season with salt and pepper. If the sausage gives off a lot of fat, pour most of it off, but leave a little to add flavor to the sauce. Add the red wine and let it boil until it's almost gone. Add the tomatoes with all of their juices and cook, uncovered, at a lively simmer for about 10 minutes. The sauce will thicken slightly. Add the marjoram or oregano and taste for seasoning. In a large mixing bowl, mix together ricotta, about half the grated pecorino, the nutmeg, and the parsley. Season with salt and pepper. Meanwhile, cook the pasta until al dente. Drain well and toss it with the ricotta mixture until well coated. Add the sausage and sauce and mix again. Add the mozzarella and toss gently. Pour everything into the baking dish and sprinkle the remaining pecorino on top. Bake uncovered until lightly browned and bubbling, about 20 minutes. Serve right away.
4 Cheese Baked Ziti
1 lb dry ziti pasta
1 onion, chopped
2 garlic cloves
1 lb extra lean ground beef
2 (26 ounce) jars spaghetti sauce
6 ounces provolone cheese, sliced
ricotta cheese
6 ounces mozzarella cheese, shredded
2 tablespoons parmesan cheese, grated
--Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain. In a large skillet, brown onion, garlic, and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes. Preheat the oven to 350. Spray a 9x13 inch baking dish with non stick cooking spray Layer as follows: 1/2 of the ziti, Provolone cheese, Ricotta, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Cover with foil. Bake for 35 minutes in the preheated oven. Remove from oven and remove foil. Sprinkle with Parmesan cheese and return to oven uncovered. Bake 5 minutes more or until cheese is golden brown.

Sauce
4 (28 ounce) cans crushed tomatoes
2-3 teaspoons basil
2-3 teaspoons oregano
3 cloves crushed garlic (or more)
1 medium onion, finely chopped
2-3 tablespoons brown sugar
2-3 teaspoons salt
3 tablespoons good quality olive oil
1 teaspoon crushed red pepper flakes
meatballs (browned only)
uncooked Italian sausage, cut into 1 to 2 inch pieces
Pasta Mixture
2 lbs ziti pasta, cooked and drained
1 1/2-2 lbs ricotta cheese
1 cup parmesan cheese
2 eggs, lightly beaten
2-3 cups shredded mozzarella cheese
--Begin by preparing sauce as follows: In a large dutch oven, saute onions and garlic in olive oil 1 or 2 minutes. Empty all four cans of crushed tomatoes into pot. Add basil, oregano, salt, crushed red pepper and brown sugar. Stir, bring to a boil and let simmer about 20 minutes. Stir sauce (this is when I usually will"taste adjust" any ingredients such as brown sugar and salt). Add meatballs that have just been browned and uncooked italian sausage. Cover and simmer sauce for about 1 1/2- 2 hrs. About 10 minutes before sauce is done, mix ricotta cheese, eggs and parmesan cheese in a large bowl. Add about 2 1/2 cups of sauce to the cheese mixture and mix well. (Keep remaining sauce with meatballs and sausage warm). Toss cooked ziti with cheese/sauce mixture and spoon into a 9x13 inch baking pan. (you may need a larger pan or more than 1 pan). Sprinkle pasta with mozzarella cheese. Bake at 350 for 45 minutes to 1 hr. Serve pasta with the extra sauce, meatballs and sausage ladled over top of each serving.
