Answers: i have 4 pieces of chicken tighs,i want to cook somethimg nice for my hubby when he comes in from work,what can i make,something tasty and different?any suggestions guys,thankyou in advance..
Chicken Fried Rice
3 chicken breasts (in bite size pieces)
1/4 cup onions (chopped)
1 large carrot (cubed)
1/4 cup green onions (chopped)
4 cups cooked rice
2 1/2 teaspoons salt
4 1/2 tablespoons butter (softened)
1/2 teaspoon oil
1/4 teaspoon sesame seeds
2 1/2 teaspoons pepper
2 teaspoons soy sauce
2 eggs
--Heat wok to medium high heat. Spray with cooking spray and scramble the eggs. Once done, chop and set aside. Add oil to wok and sauté chicken, onion, green onion and carrots until done. Return eggs to wok and mix well. Break off chunks of steamed rice and mix well with other ingredients. Add sesame seeds, salt, and pepper. Stir in butter and soy sauce. Mix well and let sit for 5 minutes before serving.
*This is my favorite recipe for fried rice! The changes I made were to omit the carrot and add more soy sauce (at least 1/4 cup-1/3 cup)!
Chicken Chimichangas
2/3 cup picante sauce or your favorite salsa
1 teaspoon ground cumin
1/2 teaspoon dried oregano leaves, crushed
1 1/2 cups cooked chicken, chopped
1 cup shredded cheddar cheese
2 green onions, chopped with some tops (about 1/4 cup)
6 (8 inch) flour tortillas
2 tablespoons margarine, melted
shredded cheddar cheese, for serving
chopped green onions, for serving
picante sauce, for serving
--Mix chicken, picante sauce or salsa, cumin, oregano, cheese and onions. Place about 1/4 cup of the chicken mixture in the center of each tortilla. Fold opposite sides over filling. Roll up from bottom and place seam-side down on a baking sheet. Brush with melted margarine. Bake at 400°F for 25 minutes or until golden. Garnish with additional cheese and green onion and serve salsa on the side.

Black Bean and Chicken Enchiladas!
3/4 lb boneless skinless chicken breasts, cooked and shredded
3 slices bacon
2 garlic cloves, minced
1 1/2 cups picante sauce, divided
1 (16 ounce) can black beans, undrained
1/2 cup bell peppers, chopped (green or red)
1 teaspoon cumin
1/4 teaspoon salt
1/2 cup green onions, sliced
12 (6 inch) flour tortillas
1 1/2 cups monterey jack cheese, shredded
--In a skillet, cook bacon until crisp. Drain on a paper towel and crumble. Pour off all but 2 tablespoons of bacon fat from the skillet. Add chicken and garlic to the skillet and cook until garlic is fragrant. Stir in 1/2 cup picante sauce, black beans, chopped pepper, cumin, and salt. Simmer until thickened, about 8 minutes, stirring occasionally. Stir in green onions and bacon. Spoon 1/4 cup bean mixture down center of each tortilla and top with 1 tablespoon cheese. Roll up and place seam-side down in a lightly greased 9x13 inch baking dish. Spoon the remaining picante sauce evenly over enchiladas. Top with remaining cheese. Bake at 350 degrees for 25 minutes.
*The bacon is so good in this, add more if you really like bacon!

Just put them in the oven with a little BBQ sauce and bake for about an hour at 350. Have a salad and a baked potato with it and make a simple dessert.
you could warm you up. slide down the banister a few times.
try sprinkling a beef oxo over the chicken
bake them in the oven and serve with garlick bread ,peas and sweet corn..........does it for me
you can cook chicken (4 pieces of it)
to make it different - just add smiley faces using a marker pen or something.

Put the thighs in the crockpot with some onion slices. Pour over your favorite BBQ sauce (or terriaki, etc.) Serve with rice, BBQ beans, cornbread, etc. The smell will hit him the minute he walks through the door. If you want a really good salad to go with this try this one:
Caesar Coleslaw
1 pkg pre-made coleslaw
1/4-1/2 cup shredded parmesean cheese
1/2 pkg caesar croutons
1 bottle creamy caesar dressing
Toss first three ingredients together. Add enough dressing to coat. It's even good the next day!
Stick the thighs in an oven prove dish.
Add one onion chopped into quarters.
Add a tomato chopped into quarters.
Add half pint of water and half a cup of red wine.
Pinch of salt, pepper and a sprinkle of rosemary.
Whack it in the oven and make sure it doesn't go dry.
When nearly cooked, make some garlic mash and gravy.

Put them in a oven dish, salt, pepper, few herbs, 1 glass of white wine (or red). Put few uncooked potatoes around and cook it slow for 1 1/2 to 2h. Easy and delicious.
Deviled Chicken Thighs
Don't be alarmed by the 2 tablespoons of hot pepper sauce called for below?the resulting marinade is spicy, but not incendiary.
Chicken:
3 tablespoons fresh lemon juice
2 tablespoons hot sauce (recommended: Tabasco)
2 3/4 pounds chicken thighs
Bread Crumb coating:
3 tablespoons unsalted butter
3 tablespoons packed fresh parsley leaves
3/4 cup fine dry bread crumbs
3/4 teaspoon salt
1 tablespoon paprika
1/8 teaspoon cayenne
Put the lemon juice, hot pepper sauce, and chicken in a large sealable plastic bag and seal bag. Shake bag to coat chicken with hot pepper sauce mixture. Chill chicken in 1 layer, turning bag occasionally, 1 hour.
Preheat oven to 425 degrees F. Grease 1 large shallow baking pan.
To make the coating: In a small saucepan melt the butter. Finely chop the parsley and in a bowl, stir together with the remaining coating ingredients.
Drain thighs in a colander and arrange, without crowding, in baking pan. Brush each thigh on all sides with melted butter and roll in coating, pressing crumbs gently to adhere and returning to pan.
Bake the chicken, 40 minutes total, or until cooked through and golden brown. Chicken may be made 1 day ahead and cooled before being chilled in an airtight container.
Serve chicken hot or at room temperature.

you will need 1 can of chopped tomato
1 clove of garlic crushed
half a sweet pepper diced
half a medium onion diced
6 button mushrooms
1 chilly chopped up
1 teaspoon ground cumin
1 teaspoon paprika
1 stick of celery chopped up
a pinch of oregano / thyme / basil
1 tablespoon tomato puree
1 knor chicken stock cube
1 tablespoon Olive oil
method
put oil in pan heat add chicken and fry then add the onions peppers mushrooms and chilly fry for a few Min's more add the herbs and celery cook again for a few Min's then add the tomato and tomato puree and stock cube cook this for an hour giving the pan a stir occasionally so it wont burn we have this with noodles or rice makes a change from the ordinary run of the mill chicken dish

This is delicious...
put some cherry tomatoes (different colours and sizes are good) in boiling water. Leave for a few mins and then wipe off the skins. Leave. Par boil some baby potatoes. Lightly season and brown the chicken thighs in a little olive oil. Put all of these in a casserole dish with some olive oil, fresh oregano or basil and garlic and mix around. Bake in the oven. Serve with a side salad, some crusty bread and a nice chilled glass of white wine. Yummy.
Using a roasting pan with a grate make a mire poix which is simply cutting up some celery,onion, and carrots in big chunks and cook under the chicken in the oven when chicken is done mire poix will be dark. Make a roux with equal parts of oil and flour and cook until you get a texture of wet sand and a color of a blonde. Add some chicken stock with the roux and stir pan over the stove top until it is thick as a gravy strain the veggies out and pour the gravy over the chicken. This is good trust me.
lIf you peel the flesh off the bones and leave it to marinate for a shor while in lime/lemon or even orange juice with crushed garlic you could meanwhile chop peppers , onions, mushrooms, corgettes and indeed anything else you know can be stirfried, Wash your rice and put in a saucepan with peas, sweetcorn and a stock cube, cover with cold water bring to the boil, simmer for 10 mins switch off and in the next 10 minutes cook your meat and veg in a wok with soya sauce, oyster sauce, ginger and fish sauce. It tastes lovely takes no time and is filling without being too heavy. Another easy one is to seal the chicken then put in a stewpan with onions, mushrooms etc with white wine, put potatoes in the oven to have with it, the wine back in the fridge to drink with the meal and you will both feel relaxed.
