I'm making Manicotti for my Dad's birthday. Do you have a great family recipe for Manicotti I can have?!

Oh for the love of God don't use this crap.

And don't get suckered into using "manicotti" pasta...do it like the Italians do it...use lasagna noodles and roll them.

American's Test Kitchen has a great manicotti recipe, I highly recommend it.

Manicotti

1 package Hillshire Farm Italian Sausage (Mild)
1 (12 ounce) can tomato sauce
1 can tomato paste
1 can water
salt and pepper
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1 box fresh mushrooms, sliced
Filling
1 container ricotta cheese
2-3 cups mozzarella cheese, shredded
1 cup parmesan cheese
1 package frozen spinach, chopped or 8 ounces fresh spinach, chopped fine
1 egg
salt and pepper
1 box manicotti, boil as directed on package

Squeeze out of casing into hot kettle.
Brown.
Add tomato sauce, tomato paste and water.
Add salt, pepper, garlic powder and oregano.
Put mushrooms in 30 minutes before preparing dish.
Stuff Manicotti with cheese mixture.
Put some sauce on the bottom of 9 x 13 pan.
Place Manicotti in rows so they're not touching each other.
Pour remaining sauce on top.
Top with some Mozzarella.
Put in oven at 350F degrees until it bubbles.

Manicotti with Cheese

INGREDIENTS
1 (8 ounce) package manicotti pasta
2 cups whole milk ricotta cheese
2 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon ground black pepper
3 1/2 (32 ounce) jars spaghetti sauce

DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and cool on waxed paper or aluminum foil to prevent the noodles from sticking together.
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, parsley, salt and pepper; fill manicotti with cheese mixture.
In a 9x13 inch baking dish, spread a thin layer of spaghetti sauce on the bottom and arrange manicotti in a single layer; cover with remaining sauce. Cover dish with aluminum foil and bake in preheated oven for 40 minutes. Remove foil and bake for 15 minutes longer; serve.

Ryan's Low-Fat Manicotti

1 (8 ounce) package manicotti
1/2 lb spicy turkey sausage
1/2 lb ground turkey
1/4 cup egg substitute
1/3 cup nonfat milk
2 white bread, slices cubed
2 cups shredded low fat mozzarella
1 (16 ounce) carton non fat small curd cottage cheese
1 tablespoon dried Italian seasoning
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
2 (16 ounce) jars healthy choice pasta sauce with mushrooms, divided
1/4 cup shredded parmesan cheese

Cook pasta according to package directions, rinse with cold water, drain well, set aside.
Remove casings from sausage and cook it with ground turkey in a large skillet,stirring until it crumbles and is no longer pink. Drain (I sometimes add red pepper flakes to this to kick it up).
Stir together egg substitute and milk in a large bowl and add bread cubes.
Stir in sausage mixture, mozarella and next 5 ingredients.
Gently spoon mixture into manicotti shells and place in a lightly greased 13x9 inch pan.
Pour 1 12/2 jars of spaghetti sauce over shells. Cover pan with foil.
Bake in a preheated 350 degree oven for 30 minutes.
Uncover and pour remaining sauce over shells; sprinkle with parmesean cheese.
Bake uncovered 10 more minutes.
Casserole may be assembled and frozen up to 1 month. Thawed in refrigerator overnight; baked covered at 350 degrees for 40 minutes or until heated.

A simple recipe for stuffed manicotti shells is:

3 pounds Ricotta Cheese

3 Eggs

1 pound shredded Mozzarella Cheese

? Cup finely chopped Parsley

Combine ingredients in a bowl and stir until well mixed.

Spoon about 2 or 3 Tablespoons into the center of a manicotti shell

Lightly grease the bottom of a shallow casserole dish or pan.

Spoon your favorite tomato sauce into the bottom of the pan to cover.

Arrange manicotti in the pan and lightly cover with additional tomato sauce.

Sprinkle with grated Parmesan cheese, if desired.

Preheat oven to 350 degrees and bake 25 to 30 minutes until bubbly.

This simple filling for the manicotti recipe is only the beginning of the fun. Manicotti can be made using many other fillings, like cooked, chopped meat or shredded chicken, and lots of different vegetables mixed in with the cheese.

Mexican Manicotti

8 servings 1? hours 20 min prep


1 lb lean ground beef
1 (16 ounce) can refried beans
3 teaspoons chili powder
3 teaspoons oregano
1 (8 ounce) package manicotti
2 1/2 cups water
16 ounces picante sauce
16 ounces sour cream
1 cup shredded monterey jack cheese
1/4 cup sliced green onions
1/4 cup sliced ripe olives

In bowl, mix uncooked beef, beans, chili powder, and oregano.
Spoon into uncooked manicotti shells.
Place in greased 13x9 baking pan.
Mix water and sauce, pour over manicotti.
Cover and refrigerate 8 hours.
Remove from refrigerator 30 minutes before baking.
Cover and bake at 350* for 1 hour.
Uncover; spoon on sour cream.
Sprinkle with cheese, onions, and olives.
Bake for 8 minutes more.
