Why are diners waffles so much better than homemade. Does anybody have a diner waffle recipe?!
Most restaurants use a malted flour for their waffles, and some restaurants will add a dash of vanilla, so they have a lovely, home-made essence reminiscent of Grandma.
I am not sure if they sell malted flour in stores. I have not looked, as I typically will eat waffles at work.
I imagine you can add some carnation malt powder to your waffles, as well. It's about $5.00 at grocery stores.
The industry standard is Carbon's Golden Malted pancake and Waffle flour, but I honestly do not know that they retail it in stores.
They do retail it for home use on their website, which is included under this message.

I don't know what you mean. My home-made waffles are awesome. Are you making them from scratch, or from a mix? I just use the basic recipe from 'Joy of Cooking'.
I think they're better b/c (1) the waffle irons are seasoned and used for hours daily, and (2) they add a little malted milk powder to the batter.
Put instant pudding mix in your batter, it'll make it thicker and richer.
Diners use premixed waffle glop that comes in a plastic container. They sell something like it in grocery stores.
why does the coffee always test better too?

Pound Cake Waffles
Ingredients
2/3 cup shortening
1 cup granulated sugar
4 eggs, separated
1/4 cup milk
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour, sifted
1/2 teaspoon salt
1 1/4 tablespoons Baking Powder
Instructions
Preheat waffle iron. Cream shortening and sugar until light, add well-beaten egg yokls, milk, and vanilla. Sift together flour, salt, and Baking powder. Add to liquid batter and gently fold in stiffly beaten egg whites.
Cook according to your waffle iron instructions.
Makes 6 four-section waffles.
