Granny's Sugar Cookies

84 cookies 32 min 20 min prep

1 1/2 cups sugar
1 1/2 cups butter, softened (no substitutes)
2 large eggs
2 tablespoons vanilla extract
4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cream of tartar
Frosting
1 1/2 cups powdered sugar
3 tablespoons butter, softened
1 tablespoon vanilla extract
various food coloring
colored sprinkles


In a mixing bowl, cream together sugar and butter until fluffy.
Add eggs and vanilla; beat well.
Stir together dry ingredients; gradually add to creamed mixture until completely blended.
Cover and chill for at least 30 minutes.
On a lightly floured surface, roll dough to 1/4-inch thickness.
Cut with various shaped cookie cutters dipped in flour.
Transfer cookies to ungreased cookie sheet.
Bake at 350° for 10-12 minutes.
Cool on wire racks.
Frosting: Mix together sugar, butter, vanilla and milk until desired degree of spreading consistency; add milk if you want thinner frosting.
Add food coloring to obtain desired color.
Spread frosting over cookies and decorate with sprinkles

Baked Mozzarella Cheese Sticks

2 eggs
1 tablespoon water
1 cup dry breadcrumbs
2 1/2 teaspoons italian seasoning
1/2 teaspoon garlic powder
1/8 teaspoon pepper
12 pieces mozzarella string cheese
3 tablespoons flour
1 tablespoon margarine, melted
1 cup heated marinara sauce or spaghetti sauce
butter or margarine


In a small bowl, beat eggs& water.
In a plastic bag, combine bread crumbs, italian seasoning, garlic powder, and pepper.
Coat cheese sticks in flour, then dip in egg mixture and bread crumb mixture.
Repeat egg and bread crumb coatings.
Cover and chill for at least 4 hours or overnight.
Place on an ungreased baking sheet& drizzle with butter.
Bake, uncovered, at 400 degrees for 6-8 minutes or until heated through.
Allow to stand for 3-5 minutes before serving.
Use marinara or spaghetti sauce for dipping.
Enjoy!

MORAVIAN SUGAR COOKIES

1/2 cup butter
1 cup sugar
1 tsp baking powder
1 tsp vanilla
1/4 tsp salt
1 egg
1 1/4 cups flour
Topping
1/4 cup sugar
1/4 cup finely chopped nuts
2 tsp cinnamon

Preheat oven to 350°F.
Soften butter with sugar, baking powder, vanilla and salt. Blend in egg and flour.

Grease or butter 2 cookie sheets well. Spread half of the dough out on each cookie sheet to make a 10x8 inch rectangle (one for each sheet).

Mix together ingredients for topping and sprinkle evenly over the dough.

Bake at 350°F for 12 to 15 minutes, or until golden brown along the edges. Allow to cool 2 minutes, then cut into 2 inch squares. Cool on wire racks.

Makes about 40.

"These wonderful cinnamon-sugar cookies became very popular with my friends at church. My pastor loves them! You will too! Crispy edges, and chewy centers; these cookies are a crowd pleaser for sure!"

INGREDIENTS:
1/2 cup butter, softened
1/2 cup shortening
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons white sugar
2 teaspoons ground cinnamon

DIRECTIONS:
1. Preheat oven to 400 degrees F (200 degrees C).
2. Cream together butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla. Blend in the flour, cream of tartar, soda and salt. Shape dough by rounded spoonfuls into balls.
3. Mix the 2 tablespoons sugar and the cinnamon. Roll balls of dough in mixture. Place 2 inches apart on ungreased baking sheets.
4. Bake 8 to 10 minutes, or until set but not too hard. Remove immediately from baking sheets.

"Quick and easy sugar cookies! They are really good, plain or with candies in them. My friend uses chocolate mints on top, and they're great!"

INGREDIENTS:
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract

DIRECTIONS:
1. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.

Fried Mozzarella Cheese Sticks

"Mozzarella sticks are coated in a simple batter and quickly deep fried to golden perfection. Try dipping them in a marinara sauce!"

INGREDIENTS:
2 eggs, beaten
1/4 cup water
1 1/2 cups Italian seasoned bread crumbs
1/2 teaspoon garlic salt
2/3 cup all-purpose flour
1/3 cup cornstarch
1 quart oil for deep frying
1 (16 ounce) package mozzarella cheese sticks

DIRECTIONS:
1. In a small bowl, mix the eggs and water.
2. Mix the bread crumbs and garlic salt in a medium bowl. In a medium bowl, blend the flour and cornstarch.
3. In a large heavy saucepan, heat the oil to 365 degrees F (185 degrees C).
4. One at a time, coat each mozzarella stick in the flour mixture, then the egg mixture, then in the bread crumbs and finally into the oil. Fry until golden brown, about 30 seconds. Remove from heat and drain on paper towels.

Sugar Cookies with Butter Icing

should make 3 dozen cookies

1 cup butter or margarine, softened
1 cup sugar
1 egg
1 tsp. vanilla extract
2 cups all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda

Cream butter; gradually add sugar, creaming well. Beat in egg & vanilla. In a second bowl, combine flour, baking powder, & baking soda; blend this into creamed butter mixture. If necessary, chill dough until firm enough to roll.

On lightly floured surface, roll out dough; with cookie cutters cut into desired shapes. Place on lightly greased cookie sheets and bake at 350F for 7 - 8 minutes. Cool & decorate with your favorite icing.

Butter Icing
1/3 cup butter, softened
4 1/2 cups icing sugar
1/4 cup milk
1 1/2 tsp. vanilla extract (or brandy, rum, or maple extract, depending on the flavor you are looking for) food coloring (optional)

Combine all ingredients in a mixing bowl & beat until smooth. Add more milk or sugar to achieve desired consistency. This icing goes on anything and freezes very well.

Variations:

For CHOCOLATE ICING, reduce sugar to 4 cups and add 1/2 cup cocoa.

For PEANUT BUTTER ICING, substitute 1/3 cup peanut butter for butter.


Speedy Cheese Sticks

Servings: 12

6 pcs string cheese
2 pkgs refrigerated soft breadstick dough
2 tbsps bottled pesto
1 egg white -- lightly beaten
2 tsps grated Parmesan cheese
1 c bottled spaghetti tomato sauce -- for dipping

Heat oven to 375°. Slice each piece of string cheese in half lengthwise. Lightly flour work surface and rolling pin.

Separate each package of breadstick dough into 12 strips. Lightly roll 2 strips to 1 1/2-inch width. Spread middle of 1 strip with scant 1/4 tsp pesto. Place string cheese half on top of pesto. Spread scant 1/4 tsp pesto over meddle of second strip of dough. Moisten edges with water. Place, pesto-side down, on top of cheese-topped strip; press edges together to seal. Repeat with remaining dough, pesto and cheese. Transfer cheese-bread sticks to ungreased baking sheet. Lightly brush with beaten egg white; sprinkle with Parmesan. With sharp knife, slash three 1/2-inch long vents in top of each stick.

Bake in 375° oven for 12-15 minutes or until golden and puffed. Heat spaghetti sauce in small saucepan. Let cheese sticks cool slightly. Serve with warmed spaghetti sauce for dipping.

Easy Cheese Sticks

1 lb Monterey Jack, Cheddar, Swiss or mozzarella cheese, cut into 3x1/2-inch sticks
Vegetable oil
1 cup Original Bisquick? mix
1 teaspoon paprika
1/2 cup milk
1 egg
Marinara sauce, if desired


1. Place cheese sticks on tray; freeze at least 1 hour.
2. Heat 2 inches of oil to 375oF in large heavy saucapan or follow manufacturer's direction on deep fryer. Beat Bisquick mix, paprika, milk and egg until smooth. Dip cheese, 1 stick at a time, into batter, covering cheese completely.
3. Fry 8 to 10 sticks at a time 1 to 2 minutes, turning carefully, until golden brown. Drain on paper towels. Let stand 5 minutes before serving. Serve with marinara sauce.
