How long after the 'best Before' date has expired, can I use Dry yeast? Will it work?!


Question: It's past closing time for all the stores, and I rang the 24 hour place down the raod and they don't have any. I need to do some baking. Will the yeast still work if the best before is 30 december 07. The packet has never been opened

It may be fine, especially if it was stored properly. If you’re in doubt about your yeast, you should definitely proof it. To do that, combine the yeast with 1 tsp. sugar and some or all of the warm liquid called for in the recipe (the temperature should be between 105°F and 115°F; 41°C and 46°C). If it begins to bubble within about five minutes, it’s fine.

If there’s no activity, start over with new yeast.

i buy close out yeast for 10 cent's a 3 pack that's expired and it still work's great !

It may or may not work. Proof it first and if it's good, then you can pitch it... if it doens't kick, then it's no good.

It should be absolutely fine. I've used unfridgerate yeast that was over a year old. Just make sure your water isn't too hot. I like to mix the warm water with an equal amount of flour the day with the yeast the before and set it in the fridge overnight. This gives yeast plenty of time to develop and the flour will give it plenty of food.
