But peanut oil, like olive oil, which is high in monounsaturates, benefits more from storage in the refrigerator. Olive oil will keep for about 6 months in the cool, dark pantry, but up to a year in the refrigerator. It may become cloudy and thicken up in the cold, in which case, letting it warm to room temperature will restore its pouring capacity. Walnut oil and sesame oil are delicate and inclined toward turning rancid. Kept in the refrigerator, they will stay fresh for two to four months.

just to add to first answer, you can smell and taste if the oil isn't good anymore.
know how your oils smell and taste while they are fresh so you can tell when they're turning, it's subtle but noticeable.
Cooking oil goes rancid quite easily, unless it is olive oil which has a pretty good shelf life. Some tips are, if you can, refrigerate it and just keep a smaller portion of it out. Keep in a tinted glass jar as light will destroy it and don't keep it near the stove as heat isn't god for it either. You'll know when it's gone rancid. Put a bit of it on your tongue. If it kind of tingles and burns a bit, it's rancid,
We use liquid Crisco and put it in the fridge.
