2 (11.5-ounce) packages Potatoes au Gratin, defrosted according to package directions
6 strips bacon, cooked, drained and crumbled
5 large eggs, lightly beaten
2/3 cup shredded cheddar cheese
1/4 cup chopped green onions
Preheat oven to 350°F (175°C).
Combine potatoes au gratin, bacon, eggs, cheese and green onions in a large bowl; transfer to 8-inch-square baking pan.
Bake for 40 to 45 minutes or until knife inserted near center comes out clean. Season with ground black pepper.

12 eggs
4 Cups milk
2 tsp salt
2 tsp dry mustard
2 cups grated cheese (Cheddar)
8 slices bread (white bread) cubed
2 lbs Sausage (Sausage rolls work best -- like generic Jimmy Dean rolls)
Brown and drain sausage. Beat eggs and add milk, salt, dry mustard, and cubed bread. Add cheese and browned sausage. Put in glass baking dish (9X13) and refrigerate overnight. Bake at 350 for 45 minutes.
Cheesy Ham and Hash Brown Casserole

* 1 (32 ounce) package frozen hash brown potatoes
* 8 ounces cooked, diced ham
* 2 (10.75 ounce) cans condensed cream of potato soup
* 1 (16 ounce) container sour cream
* 2 cups shredded sharp Cheddar cheese

1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a
9x13 inch baking dish.
2. In a large bowl, mix hash browns, ham, cream of potato soup,
sour cream, and Cheddar cheese. Spread evenly into prepared dish.
Sprinkle with Parmesan cheese.
3. Bake 1 hour in the preheated oven, or until bubbly and lightly

10 eggs lightly beaten
1/3 cup All purpose flour
3/4 teaspoon Baking powder
10 oz Lean pork breakfast sausage, fried and crumbled
1/2 lb Monterey Jack cheese grated
1 1/2 cup Low fat cottage cheese
Preheat the oven to 375 F.
Mix the eggs, flour and baking powder together well.
Add the sausage, cheese, cottage cheese and mushrooms to the egg mixture and beat well.
Pour into a greased 13x9 glass baking dish.
Bake for 30-35 minutes. Yields 4-5 generous servings.

3 Tbsps oil
2 lbs frozen hash brown potatoes
1 onion, chopped
1 green pepper, chopped
1 red pepper, chopped
2 cups cubed ham
10 eggs, beaten
Salt & pepper, to taste
1 1/2 cups Cheddar cheese, shredded
Heat oil in large skillet. Add hash browns, onion, and bell peppers. Cook until potatoes begin to brown. Apray 9" x 13" baking dish with Pam. Spread potato mixture in pan. Top with ham. Pour beaten eggs over all and season to taste with salt and pepper. Gently stir to coat all ingredients with eggs. Sprinkle with cheese. Refrigerate overnight. Bake uncovered at 375 degrees for 35 minutes. Makes 8 servings.
Breakfast Casserole
1 pound bacon
1 tablespoon butter
2 onions, chopped
2 cups fresh sliced mushrooms
4 cups frozen hash brown potatoes, thawed
1 teaspoon salt
1/4 teaspoon garlic salt
1/2 teaspoon ground black pepper
4 eggs
1 1/2 cups milk
1 pinch dried parsley
1 cup shredded Cheddar cheese
Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch casserole dish.
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside. In a separate skillet, melt the butter and fry onions and mushrooms until tender.
Place potatoes in bottom of prepared dish. Sprinkle with salt, garlic salt, and pepper. Top with bacon, then onions and mushrooms.
In a large bowl, beat eggs with milk and parsley. Pour over casserole. Top with grated cheese. Cover and refrigerate overnight.
Bake in preheated oven for 1 hour or until set. If preparing and baking the same day, cook for 45 minutes.
you mix apples, walnuts, sugar, cinnamon , and different berries with dough ( flour , sugar , eggs , yeast )
then you keep it in the oven until the knife comes out clean, finally you sprinkle it with cinnamon and sugar.
So its more of a fruit casserole ... hope u like it <3

Sausage Breakfast Casserole
1 lb. breakfast sausage, browned and crumbled (chopped ham is good, too)
12 eggs
2 cups milk
2 tsp. salt
1 cup grated Cheddar cheese
2 tsp. dry mustard
6 cups cubed, stale French or Sourdough Bread
Place cooked sausage on the bottom of a greased 9" x 13" baking dish. Add bread evenly on top. Beat eggs, milk, and seasonings. Pour over sausage and bread. Sprinkle cheese on top. Cover with foil. Refrigerate overnight. Before baking, press bread down gently into casserole dish. Bake 350o for 50 minutes or until light golden brown and set in center. Serves 8.

Farmer's Brunch Casserole
3 cups shredded hash browns or sliced potatoes
3/4 cup (3 oz.) shredded Monterrey Jack Cheese
1 cup diced fully cooked ham
? cup sliced green onions with tops
4 beaten eggs
1? cups milk
? tsp. pepper
Optional ingredients: Sliced fresh mushrooms or diced green bellpeppers
Preheat oven to 350°. Spray 2 quart baking dish / pie plate with nonstick spray. Arrange
potatoes evenly in the bottom of the baking dish. Sprinkle with cheese, ham and green onions.
Combine milk, eggs and pepper. Pour over potato mixture. Bake uncovered for 40-45 minutes until center appears set. Let stand for 5 min. before slicing. Serve with fresh melon wedges and fresh berries and sweet bread / muffins.

Sugar Pie's Blueberry-Stuffed French Toast Casserole
Nonstick cooking spray
9 eggs, beaten
2 cups milk
? cup melted butter
? cup maple syrup
12 cups cubed stale French bread
1 (8 oz.) package cream cheese, cut into small cubes
2 cups fresh or frozen blueberries
Blueberry Syrup or maple syrup (optional)
Preheat oven to 350oF. Grease a 3-quart rectangular baking dish with cooking spray; set aside.
In a smaller bowl combine eggs, milk, butter, and the ? cup maple syrup. Whisk until combined. Place bread cubes in large bowl; add cream cheese and the blueberries. Slowly pour the egg mixture over blueberry-and-bread mixture; gently fold mixture to evenly moisten the bread. Pour into greased casserole dish.
Bake 40 to 45 minutes or until a knife inserted near the center comes out clean. If necessary, cover with foil the last 10 minutes of baking to prevent overbrowning. Let stand 10 minutes before serving. Cut in squares. Serve with Blueberry Syrup or additional maple syrup, if desired. Makes 12 servings.

This is a good and hearty breakfast dish that feeds 12. Takes 15 minutes to prepare and cook in 35 minutes.
Egg and Sausage Casserole
1 LB. pork sausage ( I use Owens regular)
1 package of refrigerated crescent dinner roll dough
8 large eggs beaten
2 cups of shredded mozzarella cheese
2 cups shredded cheddar cheese
1 teaspoon dried oregano
Place sausage in a large, deep skillet. Cook over med. high heat until evenly brown. Drain, crumble and set aside. Preheat oven to 325 degrees. Lightly grease a 9'x13' baking dish.
Line bottom of prepared baking dish with the crescent roll dough, and sprinkle with crumbled sausage. In a large bowl mix beaten eggs , and both cheeses then add oregano. Pour over the sausage.
Bake 25 to 30 minutes or until a knife inserted in center comes out clean.
I serve this dish with pan fried hash brown potatoes.

Easy El Rancho Monterey Jack Sausage Egg Casserole Recipe
3 small cans diced green chiles
1-1/2 pounds grated Monterey Jack cheese
1 lb sausage (browned) , your choice
12 large eggs
1 large can evaporated milk*
Paprika
Flour
A little salt, black pepper, depending on the sausage used
*NOTE: This makes the dish so very creamy.
Directions
Butter 9x13 glass casserole dish, sprinkle with flour.
Layer green chiles, sprinkle small amount of flour, paprika and salt. Top with *browned* sausage,
Sprinkle Monterey Jack grated cheese on top evenly
In large bowl, whisk eggs and milk together,
Pour *carefully* over the layered chilies, sausage, cheese
Sprinkle with paprika
Bake at 325 degrees.30 to 45 minutes
