Wats a good recipie for home made mac n cheese?!
Finely grate 1/4 cup cheese for each serving:
mixture of:
sharp cheddar
blue cheese
mild Swiss
boil 1/4 lb macaroni per serving al dente, drain.
In a sauce pan, melt 1 teaspoon butter or margarine per serving.
Stir in equal quantity of flour to make a roux. For each tablespoon of butter/flour add one cup cold whole or skim milk. Stir to thicken over low heat.
Add cheeses. Stir to combine.
Flavor with Coleman's dry mustard, garlic powder, salt & pepper or any herb you wish.
Oil a deep casserole.
Pour cheese sauce over mac and stir to combine. Bake in oven for 20 to 25 minutes or until top is golden.
Optional: use other shaped pasta for variety Bow-ties >< and cheese are a lot of fun!

Do you want baked or on the top of the stove? I usually just cook my noodles and add a huge chunk of velveeta and a little milk and salt & pepper to taste... stir over very low heat until the cheese is melted and you're done!~

Serves 8
* 6 tablespoons unsalted butter, plus more for baking dish
* Coarse salt and ground pepper
* 1 pound medium pasta shells
* 1/4 cup all-purpose flour
* 1 teaspoon dry mustard powder
* 4 cups whole milk
* 4 ounces sharp white cheddar cheese, coarsely grated (1 cup)
* 4 ounces Havarti cheese, coarsely grated (1 cup)
* 4 ounces Muenster cheese, coarsely grated (1 cup)
* 1 teaspoon Worcestershire sauce
* 6 slices white sandwich bread
Directions
1. Preheat oven to 400 degrees. Bring a large pot of water to a boil. Butter a shallow 4-quart baking dish (oval or 9-by-13-inch rectangle); set aside.
2. Generously salt boiling water; add pasta. Cook, according to package instructions, until 2 minutes short of al dente. Drain pasta, and return to pot.
3. While pasta is cooking, melt butter in a large saucepan over medium. Transfer 2 tablespoons melted butter to a small bowl; set aside for topping. Add flour and mustard powder to remaining butter in saucepan. Cook, whisking, 1 minute (do not let flour darken). Whisk in milk. Bring to a boil; reduce heat to medium-low, and simmer until sauce is thickened, 2 to 3 minutes.
4. Remove sauce from heat. Gradually whisk in cheeses; add Worcestershire sauce, and season generously with salt and pepper. Add sauce to pasta, and toss to combine; transfer to prepared baking dish.
5. Place bread in food processor; pulse until very coarse crumbs form (you should have about 3 cups). Add reserved melted butter, and pulse just to moisten. Scatter crumbs over pasta in baking dish. (If making ahead, cover and refrigerate up to 1 day.)
6. Place dish on a rimmed baking sheet, and bake until topping is golden and sauce is bubbling, 15 to 20 minutes. (If refrigerated, bake for 30 to 35 minutes.) Cool 5 minutes before serving.
Our Daycare Lady does the easy and fast way when she doesn't have a box or Velveeta cheese.
She just boils the noodles as on directions then puts a bunch of American Cheese slices on top of hot drained noodles & stirs it intil all melted and looks like Mac & cheese! My kids ask to make it home just like she does! This is quick and esy way for College kids if money is tight! No milk or butter needed! Just pkg of noodles and cheese slices! Cheap!!!!
Melt 3 tablespoons of butter in bottom of pan add 3 tablespoons of flour and cook over very low heat for about 3 mins ...stirring constantly...slowly add 3 cups milk,,,,blend well. let milk heat though....In a separate bowl beat 1 egg then add about 1 cup of hot milk to beaten egg to temper it....then pour egg mixture back into the hot milk....add 11/2 to 2 cups grated sharp cheddar cheese.stir till it begins to thicken.check to see if salt is needed at this point.
add prepared macaroni (1 1/2 cup pre-cook measure) to cheese mixture then transfer to a casserole dish.
Top with 1/2 cup cheddar and one cup crushed crackers that have been tossed with 5 Tablespoons of melted butter....cook at 350 for 1/2 hour or till bubbling and top is browned.
Just get the shells (we like the big ones) of your choice- and then what ever mixture of cheeses you like best. We usually use shredded sharp or colby jack. Boil the shells, drain, then add in 1 can of cream of mushroom soup, about 1/2 cup of milk, and cheese- and mix till creamy. Then put in oven pan, and top with more cheese and bake for 15- 20 minutes at 350- till all cheese is melted-
